How to choose fresh and delicious ingredients
How to choose good shrimp
- Choose shrimp with clear shells, still having a slight smell of the sea, the feet firmly attached to the body, the shrimp meat firm but not unusually plump, the joints on the shrimp’s body flexible and not falling apart, the shrimp’s head and body stick tightly together.
- Do not choose shrimp that are slimy and have a curved body forming a circle, when moving your finger on the shrimp shell, it feels bumpy like having sand.
Udon noodles can be purchased in packaged form at supermarkets or fresh noodles at specialized noodle and vermicelli shops. Additionally, you can also make fresh noodles at home.
How to cook Shrimp Stir-fried Udon Noodles
-
Prepare the ingredients
Cabbage is washed clean with water and shredded.
Green onions and garlic are washed, removing the ends and roots, peeling, and then chopped small.
Shrimp purchased should have the heads removed, legs and shells separated. Use a knife to scrape along the back of the shrimp and use a toothpick to remove the shrimp vein. After that, rinse the shrimp with clean water several times.
Tip for cleaning shrimp: You can wash shrimp with water mixed with salt and lemon to clean. Alternatively, directly apply salt and lemon to the shrimp to remove the fishy smell as well as clean the shrimp. -
Boil Noodles
You prepare a pot of boiling water and then add the udon noodles to boil until they are soft and separate. After that, you take them out and let them drain in a bowl.
Tip: Stirring the noodles continuously helps them separate more easily. To prevent the noodles from sticking and to make them more fragrant, remember to add 1 tablespoon of cooking oil when taking the noodles out. -
Stir-fry Shrimp
Place a pan on the stove, turn on high heat and add 1 tablespoon of cooking oil. Next, add the cabbage and stir-fry until fragrant, then add 1/2 teaspoon of sugar, 1/2 tablespoon of soy sauce, and garlic, and stir well.
Finally, add the prepared shrimp and stir well again. Add an additional 1/2 teaspoon of chili powder to create a spicy flavor.
-
Mix the noodles
Add the udon noodles, 3 tablespoons of oyster sauce, 1/2 tablespoon of soy sauce, and 1/2 teaspoon of sugar to the pan, and stir well for about 5 minutes. Then add the chopped green onions and stir briefly. That’s it.
Now you just need to serve the noodles on a plate and enjoy.
-
Final product
The completed udon noodles have a beautiful shiny brown color with a hint of green from the scallions, and a fragrant aroma of oyster sauce and fried garlic. The shrimp is crispy and sweet, complementing the chewy, soft texture of the noodles. Although the dish is simple, it is incredibly appealing.
