Distinguishing between matcha powder and green tea powder
- Matcha powder is a fine powder made from 100% young tea buds of the green tea plant. This powder is completely different from green tea powder in terms of nutritional value and price, as green tea powder is only ground from 30% young tea buds and the remaining 70% is young tea leaves.
- Matcha powder has a bright green color and a bitter-sweet aftertaste, unlike green tea powder which has a dark green color, may slightly turn yellow, and has a bitter astringent taste.

You can buy whole grain flour, green tea powder, baking powder, coconut oil and various nutritional seeds (almonds, pumpkin seeds) at stores selling baking ingredients, supermarkets, or purchase online on e-commerce sites.

How to make Green Tea Biscotti

Mix dry ingredients
First, add 160g of whole grain flour and 3g of green tea powder into the bowl and mix well.

Beating the eggs
Next, add 30ml of coconut oil and 60ml of honey into a new bowl and stir well.
Then, gradually add 2 chicken eggs into the honey mixture and continue to stir until well combined.

Completing the dough
Divide the dry flour mixture into several portions, then gradually add it to the egg bowl and mix well until a smooth and sticky mixture is obtained.
Next, add 5gr of baking powder and mix well to combine.

Mixing the nuts
Cut 50gr of almonds in half, then add them to the flour bowl along with 50gr of dried blueberries and 50gr of pumpkin seeds. Mix the mixture one more time to finish.

Shaping and Baking
Preheat the oven to 175 degrees Celsius for 15 minutes to stabilize the temperature.
Prepare a baking mold lined with parchment paper, then spread the batter evenly into the mold so that the cake has a thickness of about one small finger length.
Next, bake the cake for the first time for 25 – 30 minutes at 175 degrees Celsius and then let it cool. After that, cut the cake into bite-sized pieces.
Finally, place the cake on a rack and bake for the second time at 160 degrees Celsius for 15 minutes. After 15 minutes, flip the cake and bake for the third time for another 15 minutes.
