How to make Oatmeal Biscotti

Whip the eggs
Put 2 chicken eggs and 100gr of powdered sugar into a bowl, then use a mixer to beat the mixture until it turns light yellow.
Next, add 1 teaspoon of vanilla extract and continue to beat until the eggs are thick and smooth, with an ivory color.
Finally, add 40gr of melted unsalted butter, and mix well one more time to complete.
Note:- To whip the eggs quickly, you can use a water bath method over a pot of water heated to 40 – 50 degrees Celsius. Note that the water should not be hotter than the allowed temperature, or it will cook the eggs and prevent them from whipping properly.
- The eggs should be at room temperature; if they are taken out of the refrigerator, let them warm up before proceeding with this step.
- Whip the eggs in one direction, and they must be whipped well; otherwise, when mixing with the flour, the air bubbles in the eggs will easily break and cause the eggs not to whip.

Mix the flour
Add 80gr of flour, 50gr of almond flour, 100gr of oatmeal, and 1 teaspoon of baking powder into the bowl of eggs, then mix well to create a smooth mixture.

Add 100g of rolled oats, 100g of mixed nuts, and 50g of chopped dried fruit into a bowl and continue to mix well.

Preheat the oven for 10 minutes at 180 degrees Celsius to stabilize the temperature.
Place the dough on a sheet of parchment paper, then shape it into a log with your hands. Bake for 25 minutes at 170 degrees Celsius until the surface of the cookies is golden.
Tip: To shape the cookies more easily, wet your hands with a little water!Allow the cookies to cool completely and cut them into small pieces about the thickness of a finger. Then, dry the cookies at 100 degrees Celsius for 15 minutes.
Finally, flip the cookies and dry them again for another 15 minutes.
