Ingredients for Cheese Potato Soup For 2 people

Potatoes 4 tubers (about 300gr) Peas 50 gr Sweet corn 1/2 fruit (kernels separated) Cilantro roots 5 pieces Nut milk 200 ml Garlic powder 1/2 teaspoon Grated cheese 1 tablespoon

How to choose fresh and delicious potatoes

  • You should choose potatoes that feel firm, heavy, intact, and have a smooth skin surface.
  • Yellow potatoes will be tastier and sweeter than those that are slightly white.
  • Do not choose potatoes that are wrinkled, feel soft when squeezed, or have black eyes, are rotten, or have leaked water.
  • Absolutely do not choose potatoes with skin turning green or sprouting as they are extremely dangerous to health.

How to Make Cheese Potato Soup

  • Boil and mash peas and corn

    Boil a pot of water, then add 50g of peas, the kernels of 1/2 sweet corn, and 5 roots of cilantro.

    Simmer the mixture on low heat for 10 – 20 minutes until the peas and corn are tender. Then, strain the mixture through a sieve to collect the broth.

    Next, add the peas, corn, and a little broth to a blender and puree until smooth.

    Finally, strain the mixture through a sieve to remove the residue from the corn and peas.

    Add the potatoes to the blender with a little broth and puree until smooth.

    Place a pot on the stove, add the remaining broth, mashed potatoes, and 200ml of plant milk, then stir the soup over low heat.

    Afterwards, add the corn bean mixture and continue to stir until well combined.

    Finally, add 1/2 teaspoon of garlic powder, 1 tablespoon of grated cheese, and stir once more until the mixture comes to a boil to finish.
