How to make Fresh milk with black sugar tapioca and cheese cream

Mixing the black sugar tapioca flour
First, add to a bowl a mixture of 300g tapioca flour, 35g cocoa powder, 30g white granulated sugar, and 1g salt, then use a spoon to mix well.
Next, pour 280ml of boiling water into the flour bowl and mix briefly for about 1 minute.
Then, pour the flour onto a cutting board, and knead until the dough is smooth and no longer sticky to your hands.

Forming tapioca balls
You divide the dough into small round balls, then roll them into long shapes, and use a knife to cut them into small pieces and shape them into round balls with your fingertips. After shaping, you place the tapioca balls into a bowl and toss them with 20g of glutinous rice flour.
Each time you finish forming a portion of the dough, toss it once to ensure the flour sticks to prevent the balls from sticking together.
Tip: Uncooked tapioca pearls should be placed in a zip bag (food storage bag) and kept in the freezer fridge, and when you want to eat them, just take them out and cook. -
Boiling tapioca
You place a pot of water on the stove to boil, then drop in 250g of tapioca and use a chopsticks to stir a few times so the balls don’t stick together.

Next, soak for about 30 minutes for the tapioca pearls to absorb the sugar, then place the pot on the stove, cover, and cook on low heat.
After about 2 – 3 minutes of cooking, open the lid, stir once, and cover again. Cook until the sugar water reduces by half and becomes thick and sticky, then turn off the heat and let it cool slightly.

Next, add 50g of ice cubes and pour in 80ml of unsweetened fresh milk, then add cheese cream on top to complete.
