1. Durian Yogurt

How to make Durian Yogurt

  • Blend the durian

    Soak 40g of gelatin in a bowl of water for 5 minutes to bloom.

    Then, add 100g of durian flesh along with 760ml of unsweetened milk and blend the mixture until smooth.

    Note: If you like it sweet, you can use sweetened milk!

  • Cook the mixture

    Place a pot on the stove, add 380g of condensed milk, 380ml of boiling water, use a ladle to stir evenly and cook the mixture for 5 minutes to ensure the milk is cooked and completely dissolved.

    Continue to add the soaked gelatin and cook, stirring well until the gelatin is dissolved. Finally, add the blended milk and durian mixture and cook for another 5 minutes before turning off the heat.

    After cooking the milk and durian mixture, let the pot cool for about 10 minutes, then add 100ml of yogurt and stir well.

  • Completion

    Pour the yogurt into molds or jars lined with plastic wrap to help remove the yogurt easily, then pour a little boiling water into the steamer, place the yogurt molds on top, cover, and incubate for about 4 – 5 hours.

    After that, place it in the refrigerator for about 2 – 3 hours before use.

    Note:

    • During the incubation process, do not disturb the yogurt; this incubation will help the yogurt ferment and develop a delicious sour flavor.
    • You can also place the yogurt in a foam box with warm water at about 40 degrees Celsius, close the lid tightly, and incubate.
    • You can pour hot water at about 80 degrees Celsius into a rice cooker, covering 2/3 of the yogurt, close the lid tightly, and incubate.

    Cut the yogurt into bite-sized squares and serve in a glass, enjoying it with a little condensed milk, chocolate, gummy candies, Milo powder,… to make the dish even more appealing.

    You will experience the rich, chewy, cold yogurt with a sweet and sour taste, lightly fragrant with the scent of durian, which will earn you many compliments!

How to make Durian Pudding

  • Prepare the ingredients

    Soak 12gr of gelatin in a bowl of cold water for about 5 minutes until it expands. Then take it out and microwave for 15 seconds.

    Put 20gr of sago in a pot of water and boil for about 10 – 15 minutes until the sago expands, then take it out.

    In a blender, combine 350ml of unsweetened fresh milk, 200gr of durian flesh, and 40gr of sugar, then blend the mixture until smooth.

    Tip: If you prefer a sweeter taste, you can use sweetened fresh milk.

    Add the dissolved gelatin to the blended durian and milk mixture along with the cooked sago and stir well to make the pudding mixture.

    Pour the pudding mixture into molds or cups, then place in the refrigerator for about 2 – 3 hours until the mixture sets, and it’s done.

How to choose delicious durian without chemicals

  • Choose fruits that have a strong smell, spreading over a wide area; these are delicious durians. Conversely, fruits with a light fragrance, non-distinct smell, or that cannot be smelled from about 1 meter away may be durians that have been chemically treated.
  • When selecting, gently shake the durian or lightly tap the shell with a tool (knife); if you hear a “thump thump” sound, it means the durian is good and the flesh is firm. If you hear a “clang clang” sound, it indicates that the fruit is hollow, not firm, or has large seeds with little flesh.
  • Choose fruits with fresh, slightly green, and firm stems; if you press with your fingernail and see sap coming out, it’s a good sign. Durians that have been soaked in chemicals will have stems that do not produce sap when pressed or have rotten, soft stems.
  • Select durians with a green or light yellow skin; if the skin has a yellow powder that sticks to your hand, it indicates that the durian has been soaked in chemicals.
  • Observe the spikes and choose fruits with slightly rounded, sparse spikes, indicating that the fruit is ripe. In contrast, chemically treated durians will have sharp, dark spikes with signs of blackening, bruising, and softness at the base of the spikes.
  • You should choose reputable places, know the clear origin of the products, and buy during the harvest season from mid-May to July to ensure safety and easily find delicious durians.
