How to choose fresh ingredients
How to choose fresh clams
- When buying clams, you should prioritize selecting those with a hard, intact shell, not broken, and without any smell.
- In addition, fresh clams that are still alive will have their mouths tightly closed. To check further, for some cases where the clam’s mouth is slightly open, you can gently touch the clam’s shell; if it is still alive, it will immediately close its mouth.
- Avoid purchasing clams that have a foul smell, have their mouths always wide open, and whose meat easily detaches from the shell when touched.
How to choose fresh, delicious water spinach
- When buying water spinach, you should choose bunches of vegetables that are still fresh and green, with sturdy stems, a characteristic aroma when sniffed, and leaves that are darker green than the stems.
- Avoid buying bunches of water spinach that have been eaten by pests, are bruised or rotten, have an unpleasant odor, and have broken stems.
- Additionally, you should also avoid buying water spinach that has a pale green color, with black spots or yellowing, wilting on the stems or leaves. This is because the spinach is not yet fully matured, so it will not be sweet and tasty.
