Tofu 1 piece (thin) Vegetarian ribs 2 pieces Tapioca flour 1 tablespoon Rice flour 1 tablespoon Condensed milk 1 tablespoon

How to choose fresh and delicious tofu:

  • Choose soft tofu with a smooth surface, when touching it feels soft, and if it feels light in hand, you should buy it. Pieces that are heavy, firm, slightly hard, and square should not be purchased.
  • Good quality tofu, made naturally, has an off-white or milky white color, without signs of turning yellow like tofu mixed with gypsum.
  • Pure tofu will have a fragrant smell, while tofu with gypsum will smell like lime or have no smell at all.
  • If you have time, you can also make tofu at home to ensure hygiene!

How to make vegetarian pork belly

  • Prepare the ingredients

    Soak the spare ribs in water until they soften, then squeeze dry.

    Prepare a pan of oil, turn on medium heat, add the tofu and spare ribs to fry one side until golden, while the other side remains slightly white to create the pork skin layer.

    Then remove and drain.

    Mix 1 tablespoon of tapioca flour and 1 tablespoon of rice flour evenly.

    Add the flour mixture to the pan, add 100ml of water, and stir well until the flour dissolves. Strain the flour to make it very smooth, then add 1 tablespoon of condensed milk to the flour mixture.

    Place the pan containing the mixture on the stove, cook on low heat, stirring continuously while cooking. Cook until the flour thickens and becomes very dry. There’s no need to cook it too much, as it will lose its cooked texture.

    Tip:

    If you do not like condensed milk, you can replace 100ml of water and 1 tablespoon of condensed milk with 120ml of coconut milk.

  • Shaping

    Place the tofu piece on a cutting board, with the more golden side facing down and the less golden side facing up. Divide the dough into 2 equal parts. Put 1 part of the cooked dough onto the tofu piece. Place the fried spare ribs on top, pressing down to adhere.

    Add the remaining layer of dough on top of the spare ribs and place the remaining spare ribs on top. Press tightly and cut off any excess fat around the edges for a nicer appearance.

    Wrap the meat block tightly in aluminum foil as shown.

  • Steaming the pork belly

    Prepare a steaming pot of water, place the block of meat inside and steam for about 40 – 60 minutes. The longer you steam, the chewier and tastier the meat will be.

    After that, place the meat in the refrigerator for 1 hour to make it chewier and tastier.

Vegetarian pork belly 1 piece (large) Green pepper 50 gr Green onions 1 stalk Vegetarian fish sauce 2 tablespoons Vegetarian seasoning 1 teaspoon Ground pepper 1/2 teaspoon Cooking oil 2 tablespoons Sugar 3 tablespoons

  • Prepare the ingredients

    Cut the vegetarian pork belly into small bite-sized pieces.

    Rinse the green pepper, drain, and chop the green onions.

    In a bowl, add 2 tablespoons of vegetarian fish sauce, 1 tablespoon of sugar, 1 teaspoon of vegetarian seasoning, and 1/2 teaspoon of ground pepper, and stir the mixture well.

    Add the prepared fish sauce into the pot, simmer on low heat until the fish sauce thickens, add the pork belly, and sprinkle with green pepper, braising for about 10 minutes until the sauce thickens to a syrupy consistency, then add the remaining green onions and turn off the heat.

    Tip: If you prefer it spicier, you can add some chopped chili!
