- To select tasty chrysanthemum greens, when buying, you should gently press the stem. If it feels too hard, do not buy it as those are older greens. Conversely, if it feels soft, it indicates that the chrysanthemum greens are still young and will be very sweet to eat.
- Avoid choosing chrysanthemum greens that are bruised, wilted, or have many signs of insect damage.
How to choose fresh mushrooms
- Enoki mushrooms: Choose mushrooms that have a bean pod shape, are still fresh, with a firm cap, white, and shiny. The stem should not be slimy or slightly brown, and the base of the mushroom should not be separated or crumbling.
- Chicken thigh mushrooms: Choose mushrooms that are brightly colored, with a shiny exterior, and a length of about 12 – 15cm. The cap should be dome-shaped and brown, with a thin layer of fuzz on top. The stem should be white, looking and feeling very firm, with an even color.
- Seafood mushrooms: Choose mushrooms that are white and shiny, with a firm cap that feels smooth to the touch. The tip of the mushroom has a thin layer of fuzz, and the base should not be separated or crumbling.
- Avoid choosing mushrooms that are past their expiration date, have an unpleasant odor, are slimy, bruised, or have scratches, dark spots, or wrinkles.

Prepare the broth
Enoki mushrooms, chicken thigh mushrooms, seafood mushrooms, and chrysanthemum greens should be cut off at the roots, washed clean, and left to drain.
Chicken should be briefly rinsed in diluted salt water and then washed again with clean water. After that, let it drain and cut into bite-sized pieces.
Put a pot on the stove, add 1.8 liters of bone broth, 1 packet of herbal seasoning, 2 tablespoons of salt, 3 tablespoons of seasoning powder, and 1/4 tablespoon of ground pepper, then stir well to dissolve the seasonings and bring to a boil.
