Fresh milk 150 ml Chinese medicinal herbs 1 pack Chicken 1 bird (1.2 – 1.5 kg) Enoki mushrooms 300 gr Chicken thigh mushrooms 300 gr Seafood mushrooms 300 gr Chrysanthemum leaves 300 gr Common seasoning a little (Ground pepper/ salt/ seasoning powder)

  • Choose chicken of moderate size and weight, as selecting very small chicken may be immature, and very large chicken may have been injected with water.
  • Choose chicken with thin skin, characteristic golden color, and smooth to the touch.
  • Avoid selecting chicken with soft, mushy meat, signs of bruising or blood clots, or any unusual odor.

How to choose fresh and delicious chrysanthemum greens (tần ô)

  • Choose bundles of chrysanthemum greens that are dark green, not broken or bruised.
  • To select tasty chrysanthemum greens, when buying, you should gently press the stem. If it feels too hard, do not buy it as those are older greens. Conversely, if it feels soft, it indicates that the chrysanthemum greens are still young and will be very sweet to eat.
  • Avoid choosing chrysanthemum greens that are bruised, wilted, or have many signs of insect damage.

How to choose fresh mushrooms

  • Enoki mushrooms: Choose mushrooms that have a bean pod shape, are still fresh, with a firm cap, white, and shiny. The stem should not be slimy or slightly brown, and the base of the mushroom should not be separated or crumbling.
  • Chicken thigh mushrooms: Choose mushrooms that are brightly colored, with a shiny exterior, and a length of about 12 – 15cm. The cap should be dome-shaped and brown, with a thin layer of fuzz on top. The stem should be white, looking and feeling very firm, with an even color.
  • Seafood mushrooms: Choose mushrooms that are white and shiny, with a firm cap that feels smooth to the touch. The tip of the mushroom has a thin layer of fuzz, and the base should not be separated or crumbling.
  • Avoid choosing mushrooms that are past their expiration date, have an unpleasant odor, are slimy, bruised, or have scratches, dark spots, or wrinkles.

Where to buy Chinese herbal spices

  • Chinese herbal spice packets are usually sold in pre-packaged sets that include 10 herbs: cordyceps, codonopsis, lily bulb, angelica, goji berries, Chinese yam, longan, rehmannia, ligusticum, and red dates.

How to make Milk Hot Pot

  • Prepare the broth

    Enoki mushrooms, chicken thigh mushrooms, seafood mushrooms, and chrysanthemum greens should be cut off at the roots, washed clean, and left to drain.

    Chicken should be briefly rinsed in diluted salt water and then washed again with clean water. After that, let it drain and cut into bite-sized pieces.

    Put a pot on the stove, add 1.8 liters of bone broth, 1 packet of herbal seasoning, 2 tablespoons of salt, 3 tablespoons of seasoning powder, and 1/4 tablespoon of ground pepper, then stir well to dissolve the seasonings and bring to a boil.

  • Cook the hot pot

    When the water in the pot boils, add 150ml of fresh milk, stir well, and continue to boil for another 30 minutes, then adjust the seasoning to taste.

    After that, just add the chicken, chrysanthemum greens, seafood mushrooms, chicken thigh mushrooms, and enoki mushrooms into the hot pot to enjoy immediately.

    The milk hot pot is completed in just 2 simple steps. The hot pot has a light fragrant smell of traditional medicine, and when eaten, one can feel the sweet taste of the bone broth and the creamy flavor of fresh milk.
