How to make Chewy Pandan Coconut Candy

  • Prepare the gelatin mixture

    You activate the gelatin by soaking it in a bowl of cold water for about 20 minutes, allowing it to swell evenly.

    Then, put 50gr of the soaked gelatin, 45gr of sugar, and 210ml of water into a pot and cook over medium heat while using a whisk to dissolve and bring to a boil.

  • Cook pandan jelly

    Then add 45ml of pandan leaf extract into a pot, bring to a boil and stir well over medium heat for another 5 minutes, then turn off the heat.

    Pandan leaf extract:

    • You can buy pandan powder and mix it with water.
    • Alternatively, you can use 200g of chopped pandan leaves with 300ml of water blended and then strain to extract the liquid.

  • Pour into mold for the first time

    Scoop each spoon of the pandan leaf mixture cooked in step 2 into the mold. Fill it to 2/3 of the mold and place it in the refrigerator to chill for about 30 minutes.

    Tip: Choose a mold with intricate designs to make your jelly pieces look more attractive.

  • Cooking coconut jelly

    Similarly, soak gelatin in cold water for about 20 minutes.

    Then put 50gr of soaked gelatin, 45gr of sugar, 220ml of water, and 30ml of coconut milk into a pot, stir well, and boil the mixture for about 10 minutes.

    Coconut milk:

    • You can use canned coconut milk.
    • Or buy grated coconut and squeeze it for the milk.

  • Pouring the jelly mold

    Scoop small spoonfuls of the coconut milk mixture to fill the remaining space of the pandan jelly mold that has been frozen.

    Continue to place in the refrigerator and freeze for about 1 hour.

Successful execution tips

  • Before cooking, you need to hydrate the gelatin by soaking it in cold water for about 20 minutes to ensure it swells evenly.
  • When heating the gelatin with the mixture of sugar water and pandan leaves or coconut milk, you should ensure the gelatin swells evenly and the mixture reaches a temperature of about 60 degrees Celsius. This way, the gelatin will be fully activated.
  • You can store the gummy candies in a glass or plastic jar and keep them in the refrigerator.
  • Since the candies are homemade and do not contain preservatives, you should consume them within 2 – 3 days to ensure the quality of the candy and your health!
