How to Make Vegetarian Longevity Noodles Soup

Boil the noodles
Put a pot of boiling water on the stove and add 4 bundles of small egg noodles to boil for about 2 – 3 minutes over medium heat. When you see the noodles are soft, turn off the heat and scoop the noodles into a colander.
Tip: Add a little cooking oil to the pot of boiling water so that the noodles do not stick together. After scooping the cooked noodles out, you should rinse them with cold water to separate the noodles. -
Cook the broth
First, take half an ear of sweet corn and 40g of bok choy, wash them thoroughly with cold water, and let them drain in a colander. Then, use a knife to cut the corn into 4 pieces for easy eating horizontally.
Next, place a new pot on the stove and add 500ml of coconut water. Turn the heat to medium and add 30g of salted mustard greens along with the 4 pieces of corn to cook for about 8 – 10 minutes.

Put a pot of boiling water on the stove and add 300g of spaghetti to boil on low heat for about 8 – 10 minutes. When the noodles are cooked and just soft enough, turn off the heat and drain them in a colander.
Next, rinse the noodles with cold water in the colander, using your hands to gently rub so that the noodles separate and do not stick together, then let them drain.
Tip: Do not boil the noodles too long as they will swell and become mushy, making them very unappetizing and not delicious when eaten. -
Prepare other ingredients
First, wash a piece of white tofu with cold water and then cut it in half with a knife. After that, place the tofu in a bowl and use 1 teaspoon of marinated xá xÃu sauce to spread evenly over all sides of the tofu and marinate for about 20 minutes.
Wash 1 carrot, peel it, and then cut it into small strips. Similarly, after washing 100g of young corn, also cut it into strips.
For the enoki mushrooms, cut off all the dirty roots, tear them into small pieces, and soak them in a bowl of diluted saltwater for about 2 minutes. Then take them out, rinse with clean water, and let them drain.
Wash 3 green onions and then chop them finely, keeping the green parts and the white parts separate.
Soak 5 dried shiitake mushrooms in a bowl of cold water for about 1 hour to let them expand, then rinse with clean water and cut them into strips.

Stir-fried noodles and vegetables
Place a non-stick pan on the stove and add 1 tablespoon of cooking oil to heat. When the oil is hot, add half of the chopped green onions and sauté until fragrant. Next, add the previously boiled noodles and stir-fry over medium heat for about 5 minutes. Stir-fry until the noodles are firm, then turn off the heat and transfer the noodles to a plate.
Continue to heat 1 tablespoon of cooking oil in the same pan and add the remaining green onions, sautéing until fragrant. When the green onions are aromatic, add 100 grams of sweet corn and 100 grams of julienned carrots and stir-fry over medium heat for about 5 minutes.
