How to Cook Vegetarian Tofu Patties

  • Prepare the Ingredients

    Wash the white tofu, use a paper towel to absorb the water, then put it into a bowl and mash it well.

    Peel the carrot, wash it thoroughly, then grate it and chop it finely.

    Wash and chop the green onions and cilantro.

  • Mixing the tofu mixture

    Add chopped carrot and green onion into the bowl of mashed tofu. Next, add 1/3 teaspoon of seasoning powder, 1 teaspoon of broth seasoning, and 1/2 teaspoon of monosodium glutamate, then use your hands to squeeze and mix well so that the ingredients blend evenly with the seasoning.

    Then, gradually sprinkle 30g of tapioca flour into the tofu bowl and continue to mix well. When the tofu mixture sticks together into a slightly moist, not too dry mass, it is done.

    Tip:
    • If you do not have tapioca flour, you can substitute it with corn starch.
    • You can adjust the amount of flour as needed, adding more or less depending on the dryness and wetness of the tofu mixture.

    First, prepare a small tray and then brush a thin layer of cooking oil on it.

    Take about 1 tablespoon of the tofu mixture and roll it into a ball. After rolling, place it on the tray and continue rolling until all the tofu is used up.

    Place a pan on the stove with about 190ml of cooking oil, heat it on high until the oil is hot, then drop the tofu balls in to fry.

    Fry on high heat until the outside is dry and firm, then reduce to medium heat, at this point stir the tofu balls and fry for about 7 – 10 minutes. When the tofu cakes turn golden and crispy, take them out and place them in a basket to drain the oil.

    Tip: You should fry the tofu cakes in several batches to ensure they cook evenly and do not stick together.

How to Make Vegetarian Tofu Cake with Cabbage

  • Prepare the Ingredients

    After buying, wash the tofu and then use a paper towel to dry it.

    Remove the stem from the cabbage, rinse it briefly, and then use a knife to finely chop it.

    Wash the green onions with water to clean them, then chop them finely.

    Put the tofu into a bowl, then use a spoon to mash it finely.

    When the oil is hot and bubbling, add the patties one by one and fry on low heat for about 3 minutes until the surface of the patties dries out, then flip them over and fry on medium heat until they are cooked and golden brown on both sides.

    • Prepare the Ingredients

      Tofu purchased should be rinsed briefly, then dried and placed in a bowl and mashed well.

      Green beans should have the fibers removed from both sides, washed clean, and cut into small pieces using a knife.

      Carrots should be peeled, washed again with water, and then diced.

      Shallots should be peeled and minced. Chives should also be washed clean and cut into small pieces.

    How to choose good, soft tofu

    • Good tofu has a slightly opaque white color, if tofu is yellowish, it often contains gypsum; the yellower the tofu, the more gypsum it contains. The interior of the tofu looks airy, fluffy, not hard, and the four corners are not too square, indicating it does not contain gypsum.
    • Pure tofu has a characteristic light aroma, while tofu containing gypsum often has a pungent smell of lime.
