How to choose fresh, sweet watermelon

How to make Watermelon Panna Cotta

Make the panna cake layer
Soak 10g of gelatin (5 gelatin sheets) in ice water for 10 minutes to let the gelatin swell.
Place a pot on the stove. Heat 350ml of unsweetened fresh milk and 150ml of fresh cream with 3 tablespoons of sugar over low heat. Stir well until the sugar dissolves and the mixture boils.
Then add the soaked and squeezed gelatin, stir well until the gelatin is completely dissolved, then turn off the heat and let it cool.
After cooling, scoop about 2 ladles of the mixture and pour it into a thin layer in the mold, then place it in the fridge refrigerator for 1 hour.

Making the watermelon jelly layer
Soak 10g of gelatin in ice water for 10 minutes.
Blend 500g of watermelon until smooth.
Place a pot on the stove. Heat the watermelon juice with 2 tablespoons of sugar until the sugar completely dissolves.
Then add the soaked and drained gelatin. Stir constantly over low heat until the gelatin dissolves, then turn off the heat and let it cool.
Scoop about 2 ladles of the mixture and gently pour it over the set panna cotta layer, then place it in the refrigerator for 1 hour.

Decoration
Once the previous 2 layers have set, continue to pour a white layer alternating with a red layer as described above, refrigerating each layer for 1 hour.
After completion, decorate with a few mint leaves if desired.
