How to make Blueberry Yogurt
-
Sterilize the container
Blanch the container with boiling water for sanitation.
-
Prepare the blueberries
Soak the blueberries in diluted salt water for 5 – 10 minutes. Then, peel the skin off the blueberries.
After peeling, briefly boil the blueberries in boiling water for about 3 – 5 minutes, then remove and let cool.
-
Cook the blueberry peel water
Add 200ml of water to the peeled blueberries and simmer on low heat, stirring well. Cook until the water has the color of the blueberries.
Then, strain the cooking water to collect the colored water.
-
Make blueberry yogurt
Add 190g of condensed milk to the blueberry syrup, stir well until dissolved.
Next, add 220ml of unsweetened fresh milk, stir well, and finally add 100g of yogurt starter, stir again until the mixture is well combined.
-
Incubate the yogurt
Pour the yogurt mixture into jars, then add 1 – 2 pieces of blueberry flesh into each jar and close the lid.
Place the jars into a styrofoam box, add 1/2 cup of cold water and 1/2 cup of boiling water into the box, so that the water level is even with the yogurt level.
Close the lid, incubate for 6 – 8 hours, then put it in the refrigerator’s cool compartment to finish.
-
