What is yeast?
- Yeast is an essential ingredient in baking recipes, especially in making bread.
- Yeast contains natural microorganisms that help speed up the fermentation of the dough.
- For this type of bread, you can choose dry yeast or instant yeast.
- Dry yeast needs to be activated before adding it to the flour. To activate the yeast, use warm water or warm milk at about 30 – 35 degrees Celsius. Soak the yeast for 5 minutes until it bubbles like crab bricks, which indicates it is ready.
- For instant yeast, you can directly add it to the flour for mixing without needing to activate it. The instant yeast used for this bread is red instant yeast.

How to make Grilled Rice Cake
-
Mix the dough
First, put 120g of rice wine into a bowl, then use a spoon to stir well until the rice wine dissolves into a mixture.
Next, prepare another bowl containing 300g of flour, then add 60g of white sugar and 2g of yeast into it.
Finally, pour the rice wine mixture into the flour bowl to form the dough.
-
Knead the dough
Add 60ml of warm water to the bowl of dough and mix well, using your hands to knead vigorously.
Knead until the mixture sticks together to form a uniform mass.
Then, cover the bowl with plastic wrap and let it rest for about 15 minutes.
Hand kneading technique:
- First, wash your hands thoroughly and dry them. Sprinkle a thin layer of flour onto your palms, place the dough on a prepared flat surface, and gently squeeze the dough to shape it.
- Next, press the dough firmly down onto the flat surface, stretch it forward, and fold it over. Repeat this action about 5 – 6 times.
- Press the dough down with the palm of your hand, fold the piece of dough in half, and continue to flatten it. Repeat this process for about 10 minutes until the dough meets the standard.
Tips for recognizing properly kneaded dough:
- Observe the outside of the dough; if it appears shiny, smooth, and feels non-sticky to the touch, then the dough has reached the standard.
- Shape the dough into a ball and drop it onto a flat surface; if it remains intact and does not break apart, the dough has been kneaded properly.
- Press down on the surface of the dough with your hand; if the dough responds back, you can proceed to shape the bread!
-
Shaping the bread
Take a sufficient amount of dough and roll it into a ball. Use your hand to press the dough ball down on a flat surface to form a round shape. Continue this process until all the dough in the bowl is used up.
Then, place the dough pieces on a tray and cover them with plastic wrap, allowing them to rise for about 15 – 20 minutes.
-
Grilling the bread in a pan
Place a non-stick pan on the stove and turn the heat to low, adding the pieces of bread and grilling for about 3 – 5 minutes. Flip both sides of the bread, grilling until both sides are golden brown.
Then, transfer the grilled bread to a plate and get ready to enjoy.
-
Finished Product
Grilled rice wine bread when completed has a fragrant aroma. When enjoying, you will feel the sweetness mixed with a hint of the characteristic sharpness of rice wine. This bread tastes even better when enjoyed with strawberry jam!
Tips for Successful Execution
- To ensure the bread has the right delicious flavor, you should measure the ingredients accurately as suggested in the article!
- In the dough kneading step, you should knead thoroughly and evenly to achieve the right dough consistency.
- Do not turn the heat too high and grill the bread for too long; pay close attention when grilling the bread in the pan as the dish can easily burn.
How to Store Bread
- Place the bread in a bag or food storage box, seal it tightly, and keep it in a cool place, away from direct sunlight. With this method, the bread will not melt and can be stored for about 2-3 days.
