How to choose fresh, delicious chicken breast
- When choosing chicken breast, you should select pieces that are light pink, bright, with a shiny surface and slightly firm. Avoid purchasing pieces that are dark in color as this indicates the meat is no longer fresh.
- You should choose chicken breast that feels elastic when pressed, moist, dry, whole pieces that are not dry, leaking, or falling apart.
- Absolutely do not buy chicken breast that is pure white or has white spots appearing as this indicates it has been affected by chemicals or growth hormones.
- When buying pre-packaged chicken breast that is hard to observe closely, you should pay attention to the quality of the outer wrapping. Additionally, you should buy chicken breast that was produced on the same day to avoid purchasing pieces that are no longer fresh.

Tandoori powder (Indian spice powder)

How to make Tandoori Fried Chicken Spaghetti
-
Prepare the chicken marinade
Add 3 tablespoons of yogurt, 2 tablespoons of finely ground garlic powder, 1/2 tablespoon of dried parsley, 1 teaspoon of salt, 1 tablespoon of cumin powder, 1 tablespoon of lemon juice, 2 tablespoons of tandoori powder, and 1 tablespoon of cooking oil into a blender.
Next, cover the lid and blend on low speed until the mixture becomes a smooth, liquid consistency with a brownish-yellow color.
-
Marinate and Fry Chicken
Before marinating, rinse the chicken breast under running water, gently scrub to remove any dirt, then use a towel to dab off any excess water.
Place 350g of chicken breast into a bowl and pour enough sauce over to marinate the chicken. Let the chicken marinate for 30 minutes to absorb the flavors.
Next, add 2 teaspoons of cooking oil to the pan, and when the oil is hot, take the chicken breast out to let excess sauce drip off before placing it in the pan to fry. Fry each side of the chicken breast for 5-6 minutes over medium heat.
Once the chicken is fried, remove it from the pan and cut it into strips about the width of a finger.
-
Boil the pasta
Boil a pot of water on the stove over high heat, then add 1 teaspoon of salt and 3 tablespoons of cooking oil. Next, drop in 200g of pasta and lower the heat to medium. When the pasta softens and sinks, use chopsticks to stir the pasta continuously while cooking.
While cooking, scoop 4 tablespoons of the pasta water into a small bowl to save for the next steps.
After 15 – 20 minutes, remove the pasta and place it in a bowl of cold water. When the pasta cools, take it out and let it drain.
Tips for preventing pasta from sticking:- To prevent the pasta from sticking while cooking, add a little cooking oil and stir continuously. This way, the pasta will be separated, and it will look shinier and more beautiful.
- After cooking the pasta, transfer it to a bowl of cold water or rinse it under running water and shake gently. To ensure it doesn’t stick, add a little cooking oil and mix it.
-
Stir-fry noodles
In a hot pan, melt 50g of salted butter, then add 3 tablespoons of minced garlic and sauté until fragrant. Next, add 1 teaspoon of dried chili, 2 teaspoons of pepper, and 2 teaspoons of dried coriander leaves. Stir well to combine the ingredients.
Next, add the cooked pasta and stir continuously to let the seasoning soak into the noodles. Finally, add 4 tablespoons of pasta cooking water and stir for another 1-2 minutes until done.
-
Make garlic butter
Heat 1 tablespoon of cooking oil in a pan, and when the oil is hot, add 30g of butter and let it melt. Then add 3 cloves of thinly sliced garlic and stir well with chopsticks. When the garlic is golden and fragrant, turn off the heat.
