- You should choose salmon with clear, bright eyes, not cloudy and slightly bulging. The cornea should be elastic. The gills should be bright red and tightly attached to the fish body.
- Additionally, you should buy salmon with firm flesh, tightly connected, not loose and with high elasticity. It should not have a fishy smell or an ammonia-like odor.
- Avoid buying fish with scales that easily come off the body, dull, faded, and unevenly arranged scales. These are signs of fish that have gone bad, and the flesh will not be tasty.
How to choose fresh and delicious tomatoes
- You should choose ripe tomatoes that are bright red, evenly colored, without scratches, and firm to the touch.
- They should have a mild fragrance, and when you gently pull the stem, it should not come off.
- Avoid choosing tomatoes that are too large, without stems, feel light when picked up, and are soft.
How to prepare Pomfret fish stewed with tomatoes

Prepare and marinate the fish
After purchasing the pomfret, cut it into small pieces about 1.5 finger lengths, then use a knife to remove any remaining blood from the fish’s belly and soak the fish in diluted salt water for about 5 minutes, then rinse several times with water and let it drain.

- Method 2: Soak the fish in diluted salt water for about 5 – 10 minutes, then rinse several times with clean water.
- Method 3: Add ginger to the water along with the fish, then soak the fish in the mixture for about 5 minutes and then rinse it with water.

After the fish has drained, add the fish along with 1 teaspoon of seasoning, and 1/2 tablespoon of fish sauce into a bowl, mix well and marinate for about 20 minutes for the fish to absorb the flavors.

Prepare other ingredients
Wash the tomatoes, remove the stems, cut them in half, scoop out the insides, and dice them into small pieces.
Peel the shallots and garlic, then mince them. Crush the tops of the green onions. Cut the green onion leaves into sections.

Sauté the fish
First, add 1 tablespoon of fish sauce, 1/2 tablespoon of ketchup, 1/2 teaspoon of pepper, and 2 tablespoons of water into the pot. Mix well until the seasonings dissolve.
Next, add 2 tablespoons of rock sugar into the pot, cook over medium heat for about 2 minutes until the sugar turns a caramel color, then add the minced shallots, garlic, and crushed green onions.
Stir well to release the aroma of the shallots and garlic, then add the tomatoes. Sauté over medium heat for about 3 – 4 minutes until the tomatoes are soft.

Fish Stew
After the tomatoes have cooked down, add the fish sauce you just prepared, pomfret fish, and chili, and simmer over medium heat for about 30 minutes until the fish is tender and well-seasoned. Then, adjust the seasoning to taste and turn off the heat.
