How to choose good chicken leg mushrooms
- First, you should choose mushrooms that are white, bright, without black spots, bruises, or blemishes.
- Choose firm mushrooms that are not soft or wilted.
- Do not select mushrooms with cracked caps, as they may have been stored too long; choose those with firm, solid caps.
How to make Stir-fried Pig Intestines with Mushrooms

Prepare the pig intestines
Put the pig intestines into a large bowl with 2 tablespoons of coarse salt and 1 sliced lemon, then rub the intestines with the salt and lemon mixture. For a cleaner result, turn the inside of the intestines out and scrub with lemon several times to remove all the dirt.
After that, rinse the intestines under 2 – 3 times of water and let them drain, then cut into bite-sized pieces.

Prepare the other ingredients
Clean the chicken leg mushrooms, trim the stems, and cut diagonally into bite-sized slices. Remove the stems from the horn chili and cut into pieces. Peel the onion and cut into wedges.
For the green onions and Vietnamese coriander, trim the roots, wash them clean, and cut into pieces about 2 large finger lengths. Peel the shallots and garlic, then finely chop.

Stir-fried intestines
You add 1 tablespoon of cooking oil to the pan, when the oil is hot, add chopped shallots and garlic to fry until fragrant. When the shallots and garlic are golden, add the pig intestines and onions to stir-fry over medium heat until the intestines are firm.
You season with 1/2 teaspoon of seasoning powder, 1/3 teaspoon of pepper, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of red color oil, 1 tablespoon of oyster sauce, and 2 tablespoons of soy sauce.

Prepare the pork intestines
To clean the pork intestines thoroughly, so they are not bitter and smelly, when you buy them, turn them inside out, or use scissors to cut along the length of the intestines to easily wash off the slimy residue inside.
Next, mix the intestines with a little salt, fish sauce, and a bit of lemon juice, massage for a while, then rinse under strong running water to wash away the mucus.
Then, bring 1 liter of water to a boil with 1 crushed ginger root. When the water is boiling, quickly boil the intestines for 5 minutes, then remove them.
To keep the intestines crispy and clean, place them in a bowl of cold water and soak for 15 minutes, then remove, drain, and cut into bite-sized pieces.

Marinate the intestines
Place the pork intestines in a large bowl with 1/2 teaspoon of MSG, 1/2 teaspoon of sugar, 1/2 teaspoon of pepper, 1.5 teaspoons of fish sauce, and a slice of lemon, then mix well.
