How to choose fresh and delicious tuna
- Good tuna has clear, shiny eyes and visible pupils, gills that are bright red, and when pressed (especially the belly), it feels firm and elastic.
- Tuna that has been stored for a long time is not good when you see: cloudy, sunken eyes; gills turning dark or deep red; soft, mushy fish with no bright colors.
- If buying frozen fish, make sure to check the origin, expiry date, and whether the packaging is intact,… Be careful not to buy if you see a thick layer of ice inside the fish because this indicates that the fish has been frozen for too long or has been thawed and then refrozen.
How to cook Tuna with garlic and chili

Prepare and marinate tuna
The tuna you bought should be cleaned and cut into slices about 2 fingers thick.
Rub the following spices evenly onto the tuna: 1/2 teaspoon of salt, 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of cooking oil, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder. Marinate for about 30 minutes for the tuna to absorb the spices.

Make the fish sauce
In a bowl, add 2 tablespoons of sugar, 1/3 teaspoon of monosodium glutamate, 3 tablespoons of fish sauce, 2 tablespoons of annatto oil, and 4 tablespoons of water, then stir well to combine the ingredients.

Frying fish
Place a pan on the stove, turn the heat to low, then add about 200ml of cooking oil and 1/2 tablespoon of cornstarch, stirring until the starch dissolves, then add the fish to fry.
Fry until the fish is golden brown on both sides, then transfer the fish to a plate.
Tip: When frying fish, use low heat so the outside is crispy while the inside is evenly cooked, soft, and not dry. -
Simmering tuna
Heat a pan, add 1 tablespoon of cooking oil and 1/2 of the minced garlic, sauté until fragrant. Then mix the remaining minced garlic and chopped chili into the fish sauce bowl, then pour it into the fish pan.
Cover the pan, reduce the heat to low, and simmer until the sauce thickens, then taste and adjust seasoning. Occasionally scoop some sauce and drizzle it over the pieces of fish to ensure even flavor.
Finally, add in chopped green onions, cover the pan and cook for another 3 minutes, then sprinkle in 1/2 teaspoon of ground pepper, and turn off the heat.
