How to make Kumquat Syrup (Tắc) with Rock Sugar and Chives

Prepare the ingredients
Kumquats, Vietnamese balm, and chives should be washed thoroughly with water and then drained.
For the chives, crush the bulb and cut the leaves into pieces about 2 finger lengths long.
Wash the Vietnamese balm, drain it, and then cut it into small pieces about 1/2 finger length long.
Wash the kumquats, drain them, and then cut them in half.
Wash the ginger briefly with water, drain it, then cut it into thin slices. After that, put it in a mortar and pound it into a paste.

Marinate the kumquat and rock sugar mixture
Put the rock sugar into a mortar and pound it into a powder. You can also use a blender to grind it faster.
Combine the rock sugar and kumquats in a bowl, mix them well a few times, then let them marinate for 30 minutes.

Steam the syrup mixture
After marinating the kumquat and rock sugar mixture for 30 minutes, add all the ingredients including scallion, pennywort, ginger, 100ml of honey, and 2 teaspoons of salt into a bowl and cover it.
Place a pot on the stove, put the bowl inside the pot, add water until it covers half of the bowl, and proceed to steam for 60 minutes on low heat.
