How to choose fresh ripe mangoes
- Ripe, delicious mangoes that are yellow and good will feel firm when held, with shiny, smooth skin and the stem end slightly indented.
- When gently pressed, a good ripe mango will feel firm and not soft or bruised.
- You should avoid buying mangoes that are dark or have an extremely attractive appearance, as they may have been treated with chemicals or ripened using some method.
How to choose delicious fresh dragon fruit
- You should choose large round dragon fruits with a smooth, shiny skin; these are the ripe and sweet ones.
- If the dragon fruit has a red skin, choose those with a deep red color and shiny skin. Avoid selecting overly ripe and soft fruits, as they will be difficult to handle and prone to bruising.
- The freshness of the ears and stems of the dragon fruit indicates the fruit’s freshness; if the ears and stems are still green and fresh, it means the fruit has just been harvested recently.

Prepare the ingredients
First, wash thoroughly, then use a knife to peel the mango. Next, cut the mango into bite-sized pieces and put them into the blender with 100ml of filtered water to extract the juice.
Similar to the mango, peel the dragon fruit after washing and cut it into small pieces, then blend it with 100ml of filtered water to extract the juice.

Cook mango jelly
Prepare a medium-sized pot, add 200g of sugar, 5g of agar powder along with 400ml of filtered water. Continue to add the blended mango into the jelly mixture, stirring constantly to dissolve the mixture.
Place the pot on the stove and set the heat to medium, during cooking, remember to stir continuously to prevent the mixture from thickening, cook for about 10 minutes until boiling, then reduce the heat and skim off the foam that rises to the surface of the mixture.
Cook the jelly for another 1 – 2 minutes before turning off the heat!

Cook dragon fruit jelly
Similar to mango, mix 400ml of filtered water, 200g of sugar, 5g of agar powder, and the blended dragon fruit evenly to combine the mixture.
Next, place the pot on the stove and stir over medium heat. Cook for about 10 minutes until the mixture is boiling, reduce the heat and skim off the foam that rises to prevent the jelly from having holes.

Pour the jelly into the mold
First, pour a layer of mango jelly into the prepared mold, wait about 15 – 20 minutes until a slightly firm layer forms on the surface before pouring the next layer.
Turn off the heat, use a spoon to scoop the dragon fruit jelly and pour it over the mango jelly layer, being careful not to break the layer below.
Let the jelly cool in the fridge for about 1 – 2 hours before serving. Finally, take the jelly out of the fridge and cut into bite-sized pieces to enjoy.
Tip: You can cut small pieces of dragon fruit and decorate them on the surface of the jelly as you like for a more appealing look! -
