How to choose fresh and delicious goat meat
- Choose goat meat that is red, with even and firm texture, soft, elastic, and not sticky to the hand, without any strange odor. Goat meat that has been kept for a long time or from sick goats will have a strange smell, soft and mushy texture, and a pale green color.
- When buying, ask the seller to cut the piece of goat meat in half and smell it; fresh goat meat will have a distinctive pungent smell that hits straight to the nose. Meat with a faint odor is fake goat meat, which has been artificially scented.
- Use your fingernail to press on the goat skin; if the skin punctures easily, it is young goat; if the skin is thick and does not puncture, it is an old goat, which will be very tough to eat.

Preliminary preparation of goat meat
Wash the goat meat thoroughly, use a mallet to pound the meat evenly to make it tender, and when marinating, the meat will absorb the spices better.
Use your hands to rub the goat meat with white wine and crushed ginger for about 30 minutes, then wash the meat with water to eliminate the smell.
Tips for preparing goat meat to avoid odor
In addition, you can use several methods to eliminate the goat smell such as:
- Soak the goat meat in strong tea, put the goat meat in with the tea and stir-fry until the water evaporates. Do this 2 – 3 times to remove the smell.
- You can boil goat meat in water containing ingredients: cloves, sơn trà, tía tô. Or boil with cinnamon, star anise, pepper, then remove and wash clean with water.
- When stir-frying goat meat, add garlic and stir-fry together at a ratio of 500g of goat meat to 25g of garlic to eliminate the goat smell.
- Wine, vinegar, salt, and ginger are also ingredients to remove the odor. You just need to boil the goat with these ingredients or rub the mixture on the goat meat and marinate for 30 minutes, then wash it clean with water.

Marinating goat meat
Cut off the tops and roots of the lemongrass, remove the outer tough layers and finely chop.
Wash the shallots, garlic, and ginger, peel, and finely chop.
Add the goat meat to a bowl and marinate with chopped shallots, chopped garlic, chopped ginger, 2 tablespoons of oyster sauce, 2 tablespoons of seasoning powder, 2 tablespoons of cooking oil, 1 tablespoon of curry powder, and a little pepper.
Use your hands or chopsticks to mix and massage the meat so that the spices are evenly absorbed, and marinate for 20 minutes.
Note:
- If you like it sweet, you can add a little sugar or honey. These ingredients also help the meat not to dry out when grilled, giving it a beautiful shiny color.

Grilling goat meat
Use an electric grill adjusted to moderate heat (not too high or too low), place the goat meat on the grill and cook until the meat is done, with a uniform golden color on the surface.
If using a charcoal grill, wait until the coals are just right and then place the meat on the grill to cook. Avoid using too high a flame as it can burn the meat while the inside remains uncooked.
