Prepare the ingredients
Soak the snow fungus in water for about 30 – 60 minutes. When the fungus expands and softens, remove it and cut off the stems. Then chop it into small pieces and rinse clean.
Peel the papaya and cut it into bite-sized cubes.
Soak the almonds in water for about 15 minutes. Then rinse them clean and let them drain.

Cooking the dessert
Place a pot of water on the stove, then add the snow fungus and almonds, cooking on low heat until boiling. When the water boils, add the rock sugar.
Cook until you see the sugar completely dissolved, then add the papaya. At this moment, you can also add 1 tablespoon of dried apple together with the papaya to enhance the flavor of the dessert. After that, boil for about another 10 minutes before turning off the stove.
