Prepare the ingredients
Wash the mung beans thoroughly, rinse the dried lotus seeds briefly, then soak them in water for 1 – 2 hours until the mung beans and lotus seeds expand, then drain them.
Soak the snow fungus in warm water for about 20 minutes until it softens, then cut off the roots and wash away any dirt on the fungus. After that, cut the fungus into quarters or smaller depending on your preference.
Peel the ginger, wash it clean, and then slice it into thin strips.

Cook the mung beans and lotus seeds until soft
Boil 1 pot of water, then add the mung beans and lotus seeds along with 1/2 teaspoon of salt, and cook for 15 minutes over medium heat.
After about 15 minutes, add the sliced ginger and 70g of coconut sugar. Stir gently until the sugar dissolves, then add the snow fungus and cook for about another 15 minutes until the lotus seeds and mung beans are soft, then turn off the heat immediately.

Cook the coconut milk
Place on the stove with 250ml coconut milk, add 1/2 teaspoon of salt, 3 teaspoons of sugar, and 2 tablespoons of diluted tapioca flour (the ratio of tapioca flour to water is 1:2), then stir well in one direction over medium-low heat.
Cook for about 5 minutes until the coconut milk thickens and boils, then turn off the heat.
