Ingredients for Fujian Porridge Serves 4 people
Fragrant rice 100 grams (1 can) Glutinous rice 50 grams (1 handful) Water 1.5 liters Barramundi 0.5 kg Straw mushrooms 200 g Enoki mushrooms 100 grams Tapioca starch 10 grams Spicy mustard greens 30 grams Vietnamese coriander 30 grams Onion 10 grams Chili 10 grams Garlic 10 grams Cilantro 10 grams Fish sauce 10 grams Seasoning powder 2 teaspoons Salt 1 teaspoon Sugar 2 teaspoons Pepper 1/3 teaspoon
How to make Fujian Porridge

Prepare the ingredients
Clean and drain the straw mushrooms, enoki mushrooms, spicy mustard greens, Vietnamese coriander, chili, onion, and cilantro, slice the onion and garlic, and sauté until fragrant

Roasting rice
The rice is roasted, then added to the pot to cook with the sticky rice, which will make the porridge more delicious.

Prepare the barramundi
The barramundi is cleaned and cut into bite-sized pieces.

Cook the porridge
The porridge becomes soft, season with 2 tablespoons of seasoning, 1 tablespoon of salt, 2 tablespoons of sugar, 1/3 tablespoon of pepper, and a little fish sauce to enhance the flavor of the porridge.
After seasoning, add the fish that has been coated in tapioca flour to the pot of porridge. Once the fish turns opaque, transfer it to the electric hot pot. Then add the straw mushrooms first, followed by fried onion and garlic, and garnish with chili and cilantro.

When enjoying, you should dip enoki mushrooms, spicy mustard greens, and water spinach into the hot pot and scoop it out to enjoy.
