How to choose fresh pork bones

  • You should choose pork bones that have a natural pinkish-red color; when you press the meat with your hand, it should have a certain elasticity, which indicates good quality bones.
  • Choose pork bones that are of medium size; if they are too small, they are usually from young pigs, with little meat and they won’t provide sweetness when cooked.
  • Do not buy pork bones that have a purplish color, an unusual smell, or are leaking fluid; these are signs that the bones have been stored for too long and are no longer fresh.

How to choose good quality rice

  • You should choose rice grains that are uniform, round, shiny, and not broken.
  • You can also taste a bit; if the rice is fragrant and has a sweet taste, it is good rice.
  • Do not choose damp, moldy rice, rice with unusual colors, or unpleasant smells, as they may be rice that has been stored for too long and is no longer good.

How to cook Pork Bone Porridge

  • Prepare the pork bones

    To save preparation time, you should ask the seller to cut the bones into bite-sized pieces when purchasing.

    Soak the pork bones in saltwater for about 5 minutes, then rinse them with clean water 2 – 3 times and let them drain.

    To eliminate the unpleasant smell, you should blanch the pork bones in boiling water for about 1 minute and then remove them.

    • Method 1: Use white wine to rub on the pork bones and let them soak for 10 minutes, then rinse with water to help eliminate the smell.
    • Method 2: Soak the pork bones in rice water for 1 hour, then rinse with water, then cook as usual. This way, the pork bones will have their smell removed while still retaining their characteristic flavor.

  • Pound the green onion and pepper

    Buy green onions and cilantro, remove the roots, wash with water, and let them drain. Then, cut the green onions in half to take the green parts and mix with chopped cilantro.

    For the onion bulbs, put them in a mortar with a bit of ground pepper and pound them until fine.

  • Cook the porridge

    Add the pork bones into a pot with 2 liters of water, put the pot on the stove and simmer on high heat for about 20 – 25 minutes until the meat on the bones is tender. To make the broth clearer and more fragrant, remember to skim off the foam while cooking.

    When the bones are tender, add the leftover rice and cook together until the rice expands and no longer retains its grains, and the water thickens.

    Tip: If you don’t have leftover rice at home, you can rinse about 100g of rice until clean, then put it in the pot to cook with 2.5 liters of water along with the pork bones. Since the rice has not expanded yet, it will need more cooking time and more water!

    Next, add the spices including: 2 teaspoons of sugar, 2 teaspoons of salt, 1 teaspoon of monosodium glutamate, and 2 teaspoons of seasoning powder. Stir well to dissolve the spices, taste and adjust the seasoning to suit your family’s preferences.

    Finally, add the crushed pepper and cook for another 20 – 25 minutes on medium heat until the porridge is soft, then turn off the heat and serve in a bowl to enjoy right away.

  • Final Product

    Add a little chopped green onion and a bit of ground pepper on top of the porridge to have a delicious and visually appealing pork bone porridge. The strong aroma from the green onion, when tasted, the meat and bones are soft, not chewy, making it very enjoyable.
