  • You should choose those with firm meat, which feels fresh and has good elasticity when held.
  • Do not buy those that feel soft and mushy, ooze slime, or have an unpleasant smell when touched.

How to choose whole green beans

  • You should select beans that have an even green color, without any blotches or unusual colors on the surface.
  • Additionally, fresh green beans that are not shriveled should have uniformly sized beans, without significant size differences. Particularly, when pressed lightly, they should feel firm and not easily crumble.
  • Do not choose green beans that have been eaten by pests or have a musty smell, as these are old or spoiled beans.

How to prepare Black Chicken and Mung Bean Porridge

  • Prepare and marinate the black chicken

    When you buy black chicken, blanch it in boiling water for about 1 – 2 minutes, remove any remaining feathers, then clean off the claws and the oil gland at the chicken’s tail, use a knife to open the chicken’s belly and remove the inedible organs, keeping the heart and gizzard separately.

    Rub the chicken with salt and a little lemon juice, then wash it thoroughly with water and let it drain.

    Effective ways to eliminate the smell of chicken

    • First, you need to completely remove the oil gland at the chicken’s tail and clean any remaining feathers to avoid any foul smell when eating.
    • To effectively eliminate the odor of black chicken, use a mixture of alcohol and vinegar to wash the chicken and then soak it for about 5 – 10 minutes, rinsing it thoroughly with water.
    • Alternatively, you can crush a piece of ginger and put it in the alcohol, soak the black chicken for about 10 minutes, then take it out and wash it with water.

    After the black chicken has been cleaned, use scissors to cut it into bite-sized pieces.

    Put the chicken in a bowl and marinate with 1/4 teaspoon of salt, 1/3 teaspoon of seasoning powder, 1/4 teaspoon of monosodium glutamate, 1/2 teaspoon of sugar, and 1/3 of the shredded ginger. Mix well and let the chicken absorb the spices for about 20 – 30 minutes.

  • Prepare other ingredients

    To remove dirt, rinse the glutinous rice and regular rice a few times with water.

    Put the glutinous rice and regular rice into a pot, add 1 tablespoon of cooking oil, then mix well and let the rice absorb the oil for about 15 – 20 minutes.

    Wash the mung beans, removing any damaged or moldy seeds. Next, soak them in water for about 30 minutes to 1 hour.

    Peel the shallots and slice them. Peel the ginger and cut it into strips. Clean the green onions, cutting the white parts into sections and chopping the green parts finely.

    For the bean sprouts, discard any damaged sprouts and rinse them several times with water, then drain.

  • Sauté black chicken

    Place a pan on the stove, add 1 tablespoon of cooking oil and heat it, then add all the shallots to sauté until fragrant.

    When the shallots are aromatic, add the black chicken and stir-fry over medium heat until the chicken is cooked and firm.

    After the rice has absorbed the oil, add the mung beans and place the pot on the stove.

    Add 1.5 – 2 liters of water, cover the pot, and cook over medium heat until the water boils.

    When the water boils, lower the heat and simmer until the mung beans and rice grains are soft.

    Next, add all the stir-fried black chicken into the pot. Add 1/2 teaspoon of seasoning and 1/2 teaspoon of salt, then stir well.

    Cook the porridge for about 10 more minutes on low heat for the black chicken to be fully cooked.

    Finally, add the sliced ginger, chopped green onion tops, and finely chopped green onions into the pot, season to taste, and then turn off the heat.

    Tip: A clay pot helps the chicken porridge to be more fragrant and flavorful; if you don’t have a clay pot, you can still use regular pots!
