Sauté the filling
When everything is fragrant, add all three types of mushrooms that have been prepared into the pot and sauté on high heat so that the mushrooms do not release water.
When the mushrooms are slightly shriveled, add about 2 liters of water and bring to a boil. The amount of water should not be too much to suit the dish.
When the water comes to a boil again, add the remaining minced lemongrass to the pot.




Blanching the rice noodles
Boil a pot of water and add 1 tablespoon of cooking oil. When the water is boiling, add the rice noodles to the pot and stir evenly with chopsticks to prevent sticking.

Prepare the Ingredients
After purchasing the mini chicken leg mushrooms, soak them in diluted salt water for 10 minutes, rinse thoroughly with water, and let them drain.
For the dried shiitake mushroom stems, cut off the dirty ends, soak in cold water for about 1 – 2 hours. Then rinse the mushrooms and squeeze out the excess water, tearing them into 4 pieces.
Peel and wash the carrot and radish, then cut into round slices about 1/2 finger width.
Chop the lemongrass and chili finely.

Making vegetarian satay
Add 2 tablespoons of cooking oil to the pan, wait for the oil to heat up, then add 1 cup of minced lemongrass and sauté until fragrant. When the lemongrass changes color, add 1 tablespoon of minced chili and stir-fry.
Reduce the heat and season with 1 tablespoon of vegetarian seasoning, 2 tablespoons of sugar, 2.5 tablespoons of vegetarian fish sauce, and stir well, then add 2 tablespoons of annatto oil.
