How to choose good straw mushrooms
- Choose straw mushrooms that are round and still in buds. Avoid those that have fully opened.
- Black straw mushrooms are always tastier than white straw mushrooms.
- You can easily buy dried vegetarian fish sauce at vegetarian food shops.
How to Prepare Vegetarian Hot Pot

Prepare the Ingredients
Dry tofu skin should be soaked in water for about 3 hours, then washed and squeezed to remove excess water, and boiled for about 20 minutes until soft.
Remove the stems from straw mushrooms, then soak them in salt water for about 10 minutes and wash thoroughly, then drain. Cut the straw mushrooms into thin slices if desired.
Peel and finely chop the shallots. Wash the accompanying vegetables, drain, and cut into bite-sized pieces.

Filter the Fish Sauce
Put the dry fish sauce into a bowl, use a spoon to mash it, then gradually add water (about 400 ml) and mix well until the sauce dissolves.
Then, strain through a sieve to collect the fish sauce and discard the residue.

Cook the Broth
Place a pot on the stove, turn on medium heat and wait for it to heat up, then add 1 tablespoon of cooking oil and sauté the chopped shallots, minced lemongrass, and chili until fragrant.
Once the shallots and lemongrass are fragrant, add the filtered fish sauce and bring to a boil.
Tip: If you want the broth to be sweeter, you can use coconut water or add a few slices of loofah while cooking the broth to enhance the sweetness.When the hot pot water boils, you turn the heat to medium and simmer for about 5 minutes, then add 1.5 tablespoons of sugar, 1/2 tablespoon of vegetarian seasoning (you can adjust the seasoning to your family’s taste), then let it boil again and turn off the heat.

Complete the dish
You can arrange tofu, tofu skin, straw mushrooms, and accompanying vegetables into the electric hot pot and then ladle in more hot pot broth; when eating, plug it in and switch to cooking mode to boil, then switch to keep warm mode.
Tip: If you don’t have an electric hot pot, you can use a regular pot instead; when eating, put the ingredients in the pot and place it on a mini gas stove to boil. -
