How to make steamed eggplant with soy sauce
-
Prepare the ingredients
After purchasing the eggplant, cut off the stem and slice it in half. To prevent the eggplant from turning black, soak it in a basin with 1 tablespoon of salt diluted in water for 5 minutes, then rinse thoroughly and drain.
Green onions should be trimmed, washed several times with water, and finely chopped. Wash the chili with water and slice it.
Peel the garlic, rinse briefly with water, and chop finely. Rinse the lemon, slice it into 6 thin slices, and squeeze the juice into a small bowl.
-
Steam the eggplant
Add 500ml of water to the steamer pot, place a mesh directly into the steamer, and brush 1 tablespoon of cooking oil on the mesh.
Next, arrange the eggplant in the pot, turn on the stove to medium heat, cover the lid, and steam for about 15 minutes before serving on a plate.
Tip: To check if the eggplant is cooked, you can use chopsticks to poke through the body of the eggplant; if it feels soft and easy to pierce, then it is cooked.
-
Make the soy sauce
Place a pan on the stove over medium heat, add 1 tablespoon of cooking oil, use chopsticks to test; if you see bubbles around the chopsticks, add garlic and sauté until fragrant.
Next, gradually add 1 tablespoon of oyster sauce, 1 tablespoon of chili sauce, 1 tablespoon of soy sauce, 1 tablespoon of sugar into the pan and stir until the sauce boils.
Add minced green onions, sliced chili, and 1 tablespoon of lemon juice into the pan, adjust the seasoning to your family’s taste, and turn off the heat.
-
Final product
Thus, the delicious steamed eggplant with soy sauce is complete. Drizzle the sauce over the eggplant and garnish with a few slices of lemon on the plate for a beautiful presentation. The smooth sauce combined with the soft, sweet, and hot eggplant, served with white rice, is truly wonderful.
