For whole salmon
First, you should choose fish that have shiny scales, a black back, and a white belly. If the fish is getting old, you will see that the scales are not shiny, and the back will turn more silvery like the belly. Then observe the eyes of the fish; choose those with clear eyes that are not sunken.
How to prepare Steamed Salmon with Soy Sauce

Prepare the ingredients
Ginger and bell peppers cut into strips.
Green onions similarly cut into strips by slicing along each leaf.
Clean the Salmon and lightly score it to steam it faster.
How to prepare salmon to reduce fishy smell:For fresh salmon fillets, you can prepare them directly:
- Use coarse salt and vinegar or coarse salt and lemon juice to rub the surface of the meat to remove the sliminess and reduce the fishy smell.
- Then you can rinse the fish with a little white wine.
- Soaking the fish in fresh milk for 5 minutes also completely removes the fishy smell effectively.
For frozen salmon: You need to thaw it first using one of the following methods and prepare it according to the steps above.
- Thaw in the refrigerator: You need to move the salmon from the freezer to the fridge refrigerator 24 hours before cooking. Once the fish has thawed, you need to cook it immediately.
- Soak in water to thaw: Wrap the fish tightly in a plastic bag or in a food container and place it in a large bowl, filling it with water to cover the bag or container. Change the cold water every 30 minutes until the fish is completely thawed.
- Thaw using a microwave: Place the fish in the microwave and select the defrost setting for about 3 – 4 minutes. At about halfway through the thawing time, turn the microwave off and then back on again. After the microwave indicates the thawing time is done, let the plate of fish sit outside for another 5 minutes to fully thaw. This way, you can prepare the fish immediately after thawing.

Marinate the fish
You dissolve 3 tablespoons of soy sauce, 1 tablespoon of wine, 1 teaspoon of sesame oil, and 1 teaspoon of sugar together.
Then pour half of the soy sauce over the salmon, rub it evenly so that the salmon absorbs the seasoning, and marinate for 15 minutes.
