How to choose fresh and delicious pork intestines

  • The best pork intestines are those taken from freshly slaughtered pigs, so you should go to the market early to choose the freshest and tastiest intestines!
  • In addition, when buying, you should choose intestines with small, firm, and bright pink tubes. Squeeze a section to check; if you see a milky white liquid inside and no foul smell, then it is good intestines; otherwise, you should not buy it.
  • Avoid buying intestines that have turned bluish-white, have large tubes, and the liquid inside is off-white and gradually turning yellow. These are old intestines, which will be very tough and have a bitter taste, making them hard to eat.

How to prepare Pork Intestine Soup

  • Prepping the ingredients

    After purchasing the pork intestine, you can eliminate the foul smell by rubbing it with salt (or pure fish sauce) for about 5 minutes. Then rinse the pork intestine 2 – 3 times with clean water.

    Effective methods to remove the foul smell from pork intestine

    • Method 1: Use a mixture of salt and lemon to rub the pork intestine until the salt dissolves, then rinse thoroughly. After that, blanch the pork intestine in fish sauce for about 3 minutes, then take it out and rinse again with water.
    • Method 2: Cut the purchased intestine into small bite-sized pieces, then turn the small intestine inside out to remove any fatty membranes and dirt inside. Next, use flour along with a little salt to rub for about 5 – 10 minutes and rinse with clean water.

    Green onions should be trimmed of roots, washed clean, and then chopped into small pieces. The green onion tops should be split. Coriander should be washed clean and chopped finely.

  • Boiled Pork Intestines

    Put a pot on the stove over medium heat, add 1 liter of water and bring to a boil. When the water is boiling, add 1/2 teaspoon of salt and 500g of pork intestines, blanch for about 1 minute.

    Next, take the pork intestines and soak them in a bowl of ice water, soak for 5 minutes, then take them out, drain, and cut into bite-sized pieces about 1 finger length.

  • Cook the Soup

    Put a pot on the stove over medium heat, add 1.5 liters of water and bring to a boil, when the water is boiling add 1 teaspoon of salt, 1 teaspoon of monosodium glutamate, and the prepped pork intestines into the pot.

    Boil for about 3 minutes, when you see foam, skim off the foam and taste to adjust seasoning before turning off the heat.
