Ingredients for Stir-fried Pig Intestines with Lemongrass and Chili For 4 people

Pig intestines 1 kg Lemongrass 2 stalks Shallots 3 bulbs Garlic 3 cloves Chili 2 pieces Lime 1 piece Fish sauce 3 tablespoons Cooking oil 1 tablespoon Common spices a little (seasoning powder/ MSG/ sugar/ salt)

How to Choose Fresh, Non-Smelly Pig Intestines

  • You should choose intestines that are small, firm, and have a fresh pinkish-white color. The best intestines are those from freshly slaughtered pigs.
  • When buying, you should squeeze a piece of the intestine to check the liquid inside; if the liquid is milky white and has no unpleasant smell, then it is good quality intestines. Otherwise, you should not buy them!
  • Avoid purchasing intestines that are pale green, have large tubes, and contain liquid that is off-white and gradually turning yellow. These are older intestines, which will be very tough and have a bitter taste, directly affecting the flavor of the dish.

How to Prepare Stir-fried Pork Intestines with Lemongrass and Chili

  • Preparation of Other Ingredients

    For the lemongrass, cut off the roots, peel off the outer layer, wash clean, and chop finely. Peel the shallots and garlic, then mince them.

    Wash the chili, remove the stem, and chop finely.

  • Cleaning and Marinating the Pork Intestines

    To clean the pork intestines, use a knife to cut the intestines into pieces about 2 finger lengths long.

    Then place the intestines in a bowl, squeeze the juice of 1 lemon along with 2 tablespoons of salt and the zest of the squeezed lemon, and massage for about 5 minutes to eliminate the odor.

    After massaging, wash the intestines again by pouring water into the inner tube, using your hands to scrub the tube to push out the dirt inside.

    Repeat this process 2-3 times to thoroughly clean the intestines and effectively remove any odor.

    How to Clean Pork Intestines
    • Method 1: Massage the pork intestines with salt and lemon (or vinegar). Then place a pan on the stove, add about 4 tablespoons of fish sauce, bring to a boil, and boil the intestines for 3 minutes, then rinse with water.
    • Method 2: Rinse the intestines, cut into small pieces about 2 finger lengths, turn the intestines inside out, remove any fat membranes and dirt inside, then use flour with a little salt to scrub for about 5-10 minutes and rinse with water.

    Next, you add the cleaned intestines along with 1/2 tablespoon of seasoning, 1/4 tablespoon of monosodium glutamate, 1/3 tablespoon of sugar, 3 tablespoons of fish sauce, 1 tablespoon of minced garlic and onion, and 2 tablespoons of minced lemongrass into the bowl.

    Mix well and marinate for about 10 minutes for the intestines to absorb the spices evenly.

    Tip: To make the pork intestines more visually appealing, you can marinate with an additional 1 tablespoon of oyster sauce or 1.5 teaspoons of caramel sauce.

    Add 1 tablespoon of cooking oil and the remaining minced onion and garlic into the pan, sauté until fragrant, then add all the minced lemongrass. Stir until the lemongrass is fragrant, then add the marinated pig intestines.

    Stir evenly and fry over medium heat for about 15 minutes until the intestines are just cooked and the water in the pan has evaporated, then add the minced chili.

    Stir continuously for another 2 minutes, then season to taste and turn off the heat.
