- Avoid purchasing intestines that are pale green, have large tubes, and contain liquid that is off-white and gradually turning yellow. These are older intestines, which will be very tough and have a bitter taste, directly affecting the flavor of the dish.

Cleaning and Marinating the Pork Intestines
To clean the pork intestines, use a knife to cut the intestines into pieces about 2 finger lengths long.
Then place the intestines in a bowl, squeeze the juice of 1 lemon along with 2 tablespoons of salt and the zest of the squeezed lemon, and massage for about 5 minutes to eliminate the odor.
After massaging, wash the intestines again by pouring water into the inner tube, using your hands to scrub the tube to push out the dirt inside.
Repeat this process 2-3 times to thoroughly clean the intestines and effectively remove any odor.
How to Clean Pork Intestines- Method 1: Massage the pork intestines with salt and lemon (or vinegar). Then place a pan on the stove, add about 4 tablespoons of fish sauce, bring to a boil, and boil the intestines for 3 minutes, then rinse with water.
