- To buy good duck breast, you should choose pieces with skin that is yellow in color, not too dark, mottled, or with many bruises.
- You should not buy duck breast if pressing your finger into the meat causes it to deform, which may be due to water injection. Good duck will be firm, with elasticity when pressed.
How to choose other ingredients

How to make Duck Spring Rolls (Duck Chả Giò)

Prepare the ingredients
To clean and eliminate the unpleasant smell of duck breast, after buying it, rinse it briefly with water and then rub it with salt until clean.
Place a pot on the stove, bring water to a boil, and blanch the duck breast for about 5 minutes, then remove it and let it drain.
Tip: To reduce moisture from the duck breast and enhance the flavor of the dish, after blanching and draining the meat, rub it with a little salt, wait for about 5 minutes, then use paper towels to absorb the released moisture.
Wash the scallions and cut them into sections, then slice them thinly.

Sear the duck breast
Place a pan on the stove, put the duck breast in with the skin side down and sear it over medium heat until the fat renders out and the skin is golden and crispy, then flip it over. When both sides of the duck breast are evenly browned and firm, turn off the heat.
Tip: Since duck meat has a thick layer of fat on the skin, you do not need to add any cooking oil!

Mixing the filling
Use a knife to cut the duck breast into small pieces and place them in a bowl. Add the sliced green onions, 2 tablespoons of black bean sauce, 1 tablespoon of sweet and sour chili sauce, soy sauce, dark soy sauce, and chili paste, each with 1 teaspoon of sesame oil.
