  • To buy good duck breast, you should choose pieces with skin that is yellow in color, not too dark, mottled, or with many bruises.
  • You should not buy duck breast if pressing your finger into the meat causes it to deform, which may be due to water injection. Good duck will be firm, with elasticity when pressed.

How to choose other ingredients

  • Fried spring roll wrappers can be found at markets, supermarkets, or e-commerce sites.
  • Seasonings like dark soy sauce and chili sauce can be found at Chinese grocery stores or e-commerce sites.

How to make Duck Spring Rolls (Duck Chả Giò)

  • Prepare the ingredients

    To clean and eliminate the unpleasant smell of duck breast, after buying it, rinse it briefly with water and then rub it with salt until clean.

    Place a pot on the stove, bring water to a boil, and blanch the duck breast for about 5 minutes, then remove it and let it drain.

    Tip: To reduce moisture from the duck breast and enhance the flavor of the dish, after blanching and draining the meat, rub it with a little salt, wait for about 5 minutes, then use paper towels to absorb the released moisture.

    Wash the scallions and cut them into sections, then slice them thinly.

  • Sear the duck breast

    Place a pan on the stove, put the duck breast in with the skin side down and sear it over medium heat until the fat renders out and the skin is golden and crispy, then flip it over. When both sides of the duck breast are evenly browned and firm, turn off the heat.

    Tip: Since duck meat has a thick layer of fat on the skin, you do not need to add any cooking oil!

  • Mixing the filling

    Use a knife to cut the duck breast into small pieces and place them in a bowl. Add the sliced green onions, 2 tablespoons of black bean sauce, 1 tablespoon of sweet and sour chili sauce, soy sauce, dark soy sauce, and chili paste, each with 1 teaspoon of sesame oil.

    Use a spoon to mix the mixture well and marinate for about 10 minutes.

  • Wrapping the spring rolls

    Take a bowl, crack 1 egg into it, and beat the egg for about 3 minutes.

    Separate each rice paper sheet, place it on the table in a diamond shape, and add about 1 tablespoon of the mixed filling on top.

    Then, roll the rice paper twice, fold the edges inward, and continue rolling along the rice paper.

    Finally, brush a little beaten egg on the edge of the rice paper and roll it up tightly. Repeat the steps until the filling is used up.

    Put a pan on the stove with 100ml of cooking oil. When the oil is hot, add the spring rolls and fry on low heat for about 5 minutes until golden brown, then remove and let drain.
