How to choose fresh and delicious ingredients
How to choose fresh shrimp
- You should choose shrimp that have a transparent shell and flesh because they are fresh and the meat is very sweet.
- Pay attention to the head and body of the shrimp; if it’s fresh, the head will be tightly attached to the body, and the shell will be shiny and smooth.
- Shrimp with a big head will have smaller meat inside; keep this in mind.
- Avoid buying shrimp with opaque or pale flesh, or heads that have separated from the body as these are shrimp that have been dead for a long time, and the meat is usually mushy.
- Avoid selecting shrimp whose legs have turned black because those shrimp are no longer fresh.

How to choose fresh and delicious papaya
- For soups, you should choose to buy duck beak papaya (the type of ripe green papaya, ready to ripen) because when stewing or cooking soup, it will have a sweeter and more fragrant taste than raw or ripe papaya.
- You should choose papayas with dark green skin, with a few yellow spots, that feel firm when pressed, and have a stem that is still oozing sap, as this indicates freshly cut papaya.
- Good papaya has a long, slender body, feels heavy when picked up, and is of moderate size, each fruit weighing about 1 kg or less.
- Avoid choosing papayas that are overripe, unripe, or those with strange black spots or bruises.
How to make Fresh Shrimp Papaya Soup
-
Prepare and marinate shrimp
After purchasing shrimp, peel the shell, remove the shrimp head, take out the black vein and wash thoroughly. Peel and finely chop the shallots.
Then, marinate the shrimp with chopped shallots, 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, and 1 teaspoon of ground pepper. Mix well and let it sit for about 20 minutes for the shrimp to absorb the spices.
How to clean the shrimp vein quickly:
- Method 1: Use a knife to make a longitudinal cut along the back of the shrimp, then gently pull out the black vein.
- Method 2: Alternatively, you can remove the shrimp head, gently squeeze the flesh to push the vein out, and then use your hand to gently pull the vein out.
- Method 3: Use a bamboo skewer to pierce through the back of the shrimp, at the second joint from the tail, and then gently pull the vein out.
-
Prepare other ingredients
Peel the papaya, let it sit for about 5 minutes to allow the sap to drain, then wash it clean and let it dry. After that, remove the seeds and slice the papaya into thin pieces.
Trim the roots and wilted leaves of the green onions, wash them clean, and chop them finely.
-
Cook the soup
Place a pot on the stove, add 1/2 tablespoon of cooking oil. Wait for the oil to heat, then add the shrimp, stir-fry for about 2 minutes until the shrimp is firm, then add 1 liter of water and bring to a boil over high heat.
When the water boils, skim off the foam, add 1 teaspoon of salt, 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, and add all the papaya.
Gently press the papaya down into the water, continue cooking over high heat for about 4 minutes. Once the papaya is cooked, taste and adjust the seasoning as needed, add the chopped green onions, ground pepper, and turn off the heat.
