Beef tendon 300 gr Papaya 500 gr (about 1/2 fruit) Lemongrass 2 stalks Cilantro 2 stalks Ginger 1 piece (sliced) Garlic 5 cloves (minced) Cooking oil 1/2 tablespoon Oyster sauce 1/2 tablespoon Common seasoning A little (salt/ seasoning powder/ sugar/ monosodium glutamate/ pepper)

How to prepare Boiled Beef Tendon with Papaya

  • Prepare and Marinate the Beef Tendon

    After purchasing, wash the beef tendon with clean water. To eliminate the odor of the beef tendon, soak it in diluted saltwater with a few slices of ginger for about 15 minutes. Then wash the beef tendon again and cut it into bite-sized pieces.

    • Dilute a bit of vinegar with 1 liter of water and soak the beef tendon for about 5 minutes, then take it out and rinse it with water.
    • Use a bit of white wine to massage the beef tendon for about 5 minutes, then rinse it with water.
    • Use a smashed piece of ginger to rub the beef tendon, then rinse it with water.

    Marinate the beef tendon with 1/2 tablespoon of seasoning powder, 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1/2 tablespoon of oyster sauce, and minced garlic, then let it sit for about 30 minutes for the tendon to absorb the spices.

    Peel the papaya, let it sit for about 5 minutes to release the sap, then wash it clean and let it drain. After that, cut the papaya into pieces about the thickness of a finger.

    Coriander should be trimmed of roots and wilted leaves, washed clean, and then chopped finely. Lemongrass should be washed clean, smashed, and cut into sections.

    Place a pot on the stove, add 1/2 tablespoon of cooking oil into the pot. Wait for the oil to heat up, then add lemongrass and sauté until fragrant.

    Next, add the beef tendon and stir-fry for about 3 minutes until the tendon is seared, then add 1.5 liters of water and bring to a boil. Once the water is boiling, skim off the foam, reduce the heat, and simmer the beef tendon for about 40 minutes.

    After 40 minutes, when the water in the pot has reduced, add 500ml of water along with 1 teaspoon of salt, 1 teaspoon of sugar, 1/2 tablespoon of seasoning, and the papaya, and cook for another 10 minutes.

    Finally, taste and adjust the seasoning as needed, then ladle the soup into a bowl. Sprinkle with finely chopped cilantro and ground pepper for extra appeal and invite the family to enjoy.
