  • Do not buy soft ripe papayas, as they will not taste good in soup. Also avoid purchasing those that are wilted, soft, have bee stings, or are bruised.

  • Depending on your preference, you can choose to buy either the hind or front trotters. The hind trotters are larger and meatier, while the front trotters are smaller, less meaty but have softer meat.
  • Good trotters will be firm, with a dry cut surface, intact hooves, and bright pink meat that is elastic when pressed.

  • Prepare the pig’s trotters

    After buying the trotters, cut them into bite-sized pieces. To reduce the odor, use a bit of salt to rub directly on the trotters, then rinse a few times with clean water and let them drain.

    Next, place the trotters in a pot, cover with water, and add 1 teaspoon of salt, boil over high heat for about 1 minute, then remove the trotters and rinse under running water to clean off any dirt and impurities.

    • Step 1: After cutting the trotters into bite-sized pieces, use salt (or lemon juice, vinegar, or white wine) to thoroughly massage the trotters and then wash them clean.
    • Step 2: Bring a pot of water to a boil, then blanch the trotters for 2 – 3 minutes, then remove and rinse again with clean water. Blanching the trotters also helps make the soup clearer and more flavorful.

  • Simmer the pork leg

    Next, place a pot on the stove, add the pork leg, cover with water, put the lid on, turn the heat to medium, and start simmering the pork leg for about 30 – 40 minutes until the pork is completely tender.
