  • Pay attention to the head and body of the shrimp; if it is fresh, the head will be firmly attached to the body, and the shell will be shiny and smooth.
  • If the shrimp has a large head, the flesh inside will be small, so pay attention to this point.
  • Do not buy shrimp that have cloudy or pale flesh, or where the head is detached from the body, as these are shrimp that have been dead for a long time, and the meat is often mushy.
  • Avoid choosing shrimp with legs turning black as these are no longer fresh.

  • For soups, you should choose duck-billed papaya (the type of green ripe papaya, ready to ripen) because when stewed or cooked in soup, it will have a sweeter and more fragrant taste than raw or ripe papaya.
  • You should select papaya that has a dark green skin with a few yellow spots, feels firm when pressed, and has a stem that is still oozing sap as this indicates it is freshly cut.
  • Good papaya has a long, slender body, feels heavy when picked up, is of moderate size, with each fruit weighing about 1 kg or less.
  • Avoid choosing papayas that are soft ripe, still unripe, or those with strange black spots or bruises.

How to make Fresh Shrimp Papaya Soup

  • Prepare and marinate the shrimp

    After purchasing the shrimp, peel the shell, remove the head, take out the dark vein, and rinse clean. Peel and finely chop the shallots.

    Then, marinate the shrimp with chopped shallots, 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, and 1 teaspoon of ground pepper. Mix well and let sit for about 20 minutes for the shrimp to absorb the seasoning.

    • Method 1: Use a knife to make a slit along the back of the shrimp, then gently pull out the dark vein.
    • Method 2: Alternatively, you can remove the head of the shrimp, gently squeeze the flesh to push the vein out, then use your hand to pull it out.
    • Method 3: Use a bamboo skewer to pierce through the back of the shrimp, at the second segment from the tail, and then gently pull the vein out.

    Peel the papaya, let it sit for about 5 minutes to release its sap, then wash it clean and let it drain. After that, remove the seeds and cut the papaya into thin slices for eating.

    Remove the roots and wilted leaves from the green onion, wash it clean, and then chop it finely.

  • Cook the soup

    Put a pot on the stove, add 1/2 tablespoon of cooking oil. Wait for the oil to heat, then add the shrimp, stir-fry for about 2 minutes until the shrimp is firm, then add 1 liter of water and bring to a boil over high heat.

    When the water boils, skim off the foam, add 1 teaspoon of salt, 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, and add all the papaya.

    Gently press down to submerge the papaya in water, cook over high heat for about 4 more minutes. Once the papaya is cooked, taste and adjust the seasoning as needed, add chopped green onion and ground pepper, then turn off the heat.
