How to choose fresh and delicious pork belly
- You should choose pork belly that has a dry outer layer, light red or bright pink color. When cut with a knife, the meat should be light pink, slightly shiny, and the fat layer should be bright white.
- Prioritize buying pork belly with a balanced ratio of fat and lean meat so that the meat does not dry out when frying.
- You should buy pieces of meat that have a firm texture, with the meat and fat tightly attached, and feel not too loose when held.
- Avoid buying pieces of meat that have an unpleasant smell or are slimy because they are old and spoiled, which can be very harmful to health when consumed.
How to prepare Crispy Skin Roasted Pork

Prepare the pork
Buy pork belly and rub it with salt to eliminate any odors, then rinse it thoroughly with water.
Next, put a pot of water on the stove, add 1 tablespoon of vinegar, and wait for the water to boil. Once boiling, briefly boil the pork for about 5 minutes to firm up the skin. After the skin has firmed up, remove it and rinse it with clean water, then let it drain.
Once the pork has drained, use a knife to score the meat, only scoring the lean part and not cutting too deep to avoid breaking the meat.

Making the meat marinade
Put all the spices into a bowl including: 2 tablespoons of garlic, 1 tablespoon of five-spice powder, 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1 cube of fermented tofu, 1/2 tablespoon of sugar, 1 tablespoon of seasoning powder and 1 tablespoon of rice wine, then mix the spice mixture well.
Then, use the spice mixture to evenly coat the parts of the meat that have been scored (do not apply it to the skin).

Marinating the skin
Use a fork or skewer to poke the pork skin evenly; the more thoroughly you poke, the crispier the skin will be when roasted. After poking, use a paper towel to wipe the skin lightly.
Next, use a vinegar salt mixture consisting of 1 teaspoon of salt and 2 tablespoons of vinegar, and apply it evenly on the skin for about 5 minutes. After that, use a paper towel to dry it once more and apply the vinegar salt mixture a second time.
Then, use aluminum foil to wrap the marinated meat to cover the meat portion, leaving the skin uncovered, and place the meat in the refrigerator for overnight.

Place the marinated pork in the oven (keeping the foil on the meat) and grill at a temperature of 200 degrees Celsius. Grill until the entire pork skin is puffed up, then remove the foil from the meat and grill for an additional 20 minutes.
