  • Choose oysters with short shells, round bodies, not too large, and with a peak; these oysters have more meat.
  • Choose oysters that are still tightly closed; when picked up and shaken, you should hear a sound from inside.
  • If buying oysters with shells, you should ask the seller to pry open the shells, as they are very difficult to open. You just need to buy them and do a light preparation.
  • If buying packaged oysters, check the packaging to see if it is carefully and securely sealed. The bag should not be loose, and if it is vacuum-sealed, that’s even better.
  • Avoid choosing oysters that can be easily separated from their shells by hand or shucked oysters that are dry; these are either dead or have been stored for a long time.

  • When buying, choose mushrooms that are still in buds, round or cylindrical in shape. If you press lightly and feel the mushrooms are slightly firm, they are very sweet and delicious to eat.
  • Black or gray straw mushrooms will taste better than the white ones.
  • You should choose mushrooms with a distinctive smell. Mushrooms that have uniform sizes will make the dish more visually appealing.
  • Do not buy mushrooms that smell foul, are discolored, feel soft and mushy to the touch, or have grown too large, as they have been stored for too long and will not be tasty.

  • Prepare the ingredients

    Wash the oysters thoroughly and let them drain.

    For the straw mushrooms, cut off the stems, wash them with water, then soak them in diluted saltwater for about 10 minutes. Rinse again with water and then let them drain.

    Chop off the roots of the green onions and coriander, wash them thoroughly and let them drain. The green onion tops should be placed in a mortar with a little ground pepper and crushed finely. The green onion leaves and coriander should be chopped small.

  • Cook white porridge

    Wash the rice clean, put it in a pot, place it on the stove, and add 1.5 liters of water to cook it into porridge over medium heat. Cook until the porridge is done and the rice grains have expanded. Stir the porridge once with a ladle every 5 minutes to prevent it from burning at the bottom of the pot.

    Next, add the minced shallots into the pot and stir well.

    Then add the straw mushrooms and season with: 2 teaspoons of salt, 2 tablespoons of seasoning powder, 2 teaspoons of sugar, and 1 teaspoon of monosodium glutamate. Cook the porridge for about 5 – 10 minutes until the mushrooms are cooked.

    After 10 minutes, adjust the seasoning to taste, then add the fresh oysters and stir well for about 15 – 20 seconds before turning off the heat.

    Serve the porridge in a bowl, add a little chopped scallions and cilantro on top, and sprinkle a bit of ground pepper to enjoy.
