You use two pieces of ginger, peel them, and crush them finely. Then use 70ml of white wine to rub well to create a ginger wine mixture. After that, use this mixture to rub the goat meat thoroughly. Rinse it again with diluted salt water and use a towel to dry the piece of meat.
Use a knife to gently scrape off the fine hairs left on the goat’s skin, operating carefully to avoid cutting yourself. Next, make long cuts on the goat’s body so that when marinating, the sauce will soak in better.

Marinating Goat Meat
First, you mix a combination of 100ml of soy sauce, 50ml of cooking oil, 50ml of honey, 50ml of white wine, 20gr of minced garlic, 10gr of salt, 10gr of monosodium glutamate, and 20gr of annatto seeds together, stirring well for the spices to blend.
You preheat the oven to 200 degrees Celsius for 15 minutes. Then, put the goat leg in to roast at 220 degrees Celsius for 10 minutes. Take the goat leg out, brush the sauce evenly on all sides, and marinate for 4 hours.

With the thick skin of the goat, you should singe it with straw, use a torch or heat directly over a gas flame, then scrape off the remaining dirt on the skin. After that, from the joint of the leg, you will fillet the meat but do not completely separate it from the bone. You mix 50 grams of chili sauce, 20ml of cashew oil, 50ml of unsweetened fresh milk, 10 grams of minced garlic, 20 grams of green chili, and 20 grams of red chili that has been minced, along with 20 grams of salt in a large bowl, then mix well to make the marinating sauce.

When the goat is cooked, you brush the sauce evenly on both sides of the goat and grill for another 15 minutes to let the sauce soak into the goat meat.
To make the dish more flavorful, you prepare a dipping sauce with 20 grams of salt, 20 grams of green chili, and 20 grams of red chili along with 10 grams of crushed garlic. Finally, you squeeze in a slice of lemon to have a delicious dipping sauce.
