How to Choose Fresh Ingredients
How to choose good tomatoes that are not bruised
- Choose tomatoes that are bright red, evenly colored, intact, not bruised or scratched. They should have a light, characteristic tomato scent.
- It is best to pick those with the stem still attached, the stem should be fresh and firmly stuck to the top of the tomato.
- Avoid choosing bruised tomatoes or those without a fragrant smell, as they may have been artificially ripened.
How to choose fresh, clean chicken eggs
- There are 2 types of chicken eggs: free-range eggs and industrial eggs. Free-range eggs have a more delicious taste and are richer in nutrients, however, if you cannot find free-range eggs, using industrial eggs is still acceptable.
- When choosing industrial eggs, you should select those with dark and evenly colored shells, slightly rough shell surfaces, and when gently shaken, no sound is heard, indicating that these are fresh chicken eggs.
- Eggs that are pale in color, have smooth shells, and have tiny black spots, and when shaken, a clear sound is heard should not be purchased as they are likely old or may be spoiled inside.

How to prepare Korean Sweet and Sour Noodles
-
Prepare the ingredients
Wash the tomatoes and onions thoroughly and let them drain. Next, chop the onions and tomatoes into small cubes.
Next, cut the sausages into pieces about the length of a finger – about 2cm. Then use a knife to score the surface of each sausage piece, but don’t cut too deep as they may break when frying. This scoring will help the sausage pieces open up beautifully when fried.
Wash the pork with diluted salt water, then rinse it with clean water. Next, cut the meat into small cubes or mince it according to your preference.
Peel and wash the garlic, then mince it. Place the minced garlic in a plate to prepare for stir-frying.
For the Korean instant noodles, place them in a bowl, add boiling water to fully submerge the noodles. Cover and wait about 5 – 7 minutes for the noodles to soften completely. After that, drain the water and set the noodles aside for stir-frying.
-
Fry the sausages
Place a pan on the stove, add 1 spoon of olive oil and turn on medium heat. When the oil is hot, add the cut sausages to fry. While frying, remember to turn the sausages frequently to avoid burning them.
After about 3 – 5 minutes of frying, when the sausages are evenly golden on both sides and puff up nicely, take them out onto a plate. Next, crack 1 egg into the pan, cover it, and fry the egg sunny-side up for 1 minute. Then turn off the heat and place the fried egg onto a plate.
-
Make the sweet and sour sauce
Add a little cooking oil into the pan, and when the oil is hot, add the minced garlic and stir well. When the garlic turns golden and fragrant, add 50g of chopped onion and 100g of diced tomatoes, and stir-fry evenly over medium heat for about 2 minutes.
After about 2 minutes, add 3 tablespoons of ketchup, 1 tablespoon of chili sauce, 1 tablespoon of sugar, and 1/2 tablespoon of seasoning powder into the pan. Stir well and reduce the heat to low, stirring continuously and cooking the sauce mixture for 5 – 7 minutes until the tomatoes soften and release their sauce.
-
Stir-fried noodles
After the tomatoes have completely softened, add 100g of minced pork to the pan, stir-frying evenly over medium-low heat for 7 – 10 minutes until the pork is fully cooked.
After about 7 minutes, add the pre-blanched noodles, 50g of dried seaweed, and the fried sausages to the pan. Cook the mixture over medium heat for about 3 – 5 minutes for the sauce to soak into the noodles.
After 3 – 5 minutes, turn off the heat and transfer the noodles to a plate, arrange the sausages around the plate, and place a fried egg in the center. Sprinkle a bit of sesame for a nice touch and enjoy right away.
