How to Choose Fresh and Delicious Squid
- Fresh and delicious squid will have a brown body that is darker rather than pale. The white part of the body will be opaque like milk. Especially, whether brown or white, it should be shiny.
- You can press the squid’s body with your finger; fresh squid usually has firm flesh and high elasticity. This means that after pressing down and releasing, the squid quickly returns to its original state. If it is not fresh, the flesh tends to be a bit soft and mushy, particularly the elasticity is low, so when you release your hand, the squid’s body will remain indented for a while before returning to its original shape.

Grinding the marinade ingredients for the squid
