How to choose fresh squid
- Fresh squid will have a shiny color. The brown part will be dark brown, while the body of the squid will be opaque white like milk.
- When touching the squid’s body, you can feel the firm and elastic meat. When you press on the body, the squid will quickly return to its original state without leaving a dent.
- The color of the squid’s eyes is clear, not bulging, and you can clearly see the pupil without yellowing or leaking fluid.
- For fresh squid, the head and tentacles will be tightly attached to each other, firm.
Chili sauce and oyster sauce: You can buy them at markets, supermarkets, or reputable grocery stores. Alternatively, you can make them at home to ensure quality and safety.

How to make Grilled Squid with Chili Sauce

Prepare the ingredients
Rinse the squid briefly with water to remove dirt. Then, hold the tentacles and pull them away from the body. Next, remove unnecessary parts such as the ink sac, skin, brown digestive sac, and backbone.
Then rinse again with water mixed with 1 tablespoon of salt and 100ml of white wine to clean thoroughly while helping to remove the fishy smell of the squid. Finally, use a knife to make several cuts on the squid body to allow it to absorb the seasoning better.

Shallots, garlic, and chili are finely chopped.

Marinate the squid
Add the squid to a bowl along with chopped shallots, garlic, and chili, then season with 2 teaspoons of satay, 1 teaspoon of oyster sauce, 1 teaspoon of chili sauce, and 1 teaspoon of seasoning powder. Mix well to let the squid absorb the spices and marinate for 15 minutes.

Grill the squid
Place the squid in the air fryer and grill at 180 degrees for 10 minutes, then flip the squid over and grill at 200 degrees for 5 minutes.
