How to choose fresh and delicious squid

  • Fresh and delicious squid has a dark brown body, and the white part is opaque like milk and shiny.
  • Fresh squid usually has firm meat and high elasticity, with all the tentacles intact and tightly attached to the squid’s head.
  • Fresh squid often has very bright and clear eyes, allowing you to see the pupil inside clearly.
  • Non-fresh squid tends to have slightly soft and mushy meat, and the eyes are usually very dull and cloudy.
  • Do not buy if you see the tentacles falling off, as it is likely that the squid is no longer fresh. In particular, if the squid is fresh, the tentacles are very firm, while the tentacles of spoiled squid are usually soft and mushy.

  • Prepare the squid and ingredients

    To clean and eliminate the fishy smell, remove the internal organs, ink sac, backbone, and beak of the squid. Then rinse the squid with diluted salt water, and rinse again with clean water twice to drain.

    Place a pan on the stove, add 2 tablespoons of cooking oil, and sauté minced garlic until fragrant.

    When the garlic turns golden, add 1 teaspoon of chili powder, mix quickly, then remove to a bowl.

    Next, marinate the squid with 2 tablespoons of fish sauce, 3.5 tablespoons of sugar, 2 tablespoons of seasoning powder, 1 teaspoon of monosodium glutamate, 1 teaspoon of pepper, 1 tablespoon of annatto oil, and 2 tablespoons of satay, then add the sautéed garlic and mix well.

    Marinate the squid for about 15 minutes for it to absorb the spices evenly.

    Tip: If you want it spicy, you can add 2 finely chopped fresh chili peppers according to your taste.

  • Grilled Squid

    Burn the charcoal and heat the grill, then place the squid on it and grill until the squid is firm and slightly golden all over, then turn off the heat.

    Tip:

    • You can also use a oven set to 200 degrees Celsius, preheat the oven for 10 minutes. Place the squid inside to grill for 10 minutes, then flip and grill for another 15 minutes at 180 degrees Celsius.
