How to choose fresh and delicious red tilapia
- To make the dish tasty, you need to choose fresh red tilapia, with clear eyes, a slimy texture when touched, pink gills, firm scales, and still flexible.

Preparing the fish
First, rub the fish with salt to eliminate the fishy smell and dirt for 5 minutes. Then, rinse the fish clean, let it drain, and use a cloth to dry it thoroughly.
Next, use a knife to fillet the fish and cut it into bite-sized pieces. Then, coat the fish pieces evenly with batter and deep fry them in 200ml of cooking oil over medium heat until the outer layer is golden and crispy, then remove to a plate.
Tip: To prevent oil splatter during frying, you can add a little salt to the pan.For the fish bones, put them in a pot of water along with smashed ginger, shallots, and 1 teaspoon of seasoning and simmer on low heat to make the broth.

Mixing Ingredients
Soak the rice paper in bowl of warm water for 5 minutes to soften it, then drain in a colander. Next, blanch the rice paper once more in a pot of fish bone broth for 1 – 2 minutes and then drain in a colander.
For the fish sauce, mix at a ratio of 2 tablespoons of fish sauce, 2 tablespoons of sugar, 2 tablespoons of vinegar, and 1 tablespoon of warm water. Stir well until the mixture dissolves and add minced garlic and chili.
Next, blanch the mustard greens in the pot of fish bone broth. Shred the carrots thinly, and wash and chop the herbs. Cut the fried fish cake into finger-sized pieces.
Finally, layer in a bowl in the following order: rice paper, fried fish, mustard greens, cilantro, fish cake, fish sauce, and fried shallots. Mix everything together and enjoy.
