How to Choose Fresh Shrimp
- Fresh shrimp should have a translucent shell with a slight scent of seawater, not fishy; avoid shrimp with dark patches or inconsistent colors.
- Fresh shrimp usually have their tails curled together; if the tails are spread out, the shrimp have likely been injected with chemicals or water to appear fatter.
- Fresh shrimp typically have legs firmly attached to the body; if the legs have turned black or are no longer tightly attached, do not buy them as they are no longer fresh.

How to prepare Dried Shrimp with Lemongrass and Chili

Prepare the shrimp
You cut off the shrimp head, peel off the shell (leave the shrimp tail), remove the shrimp vein and wash it clean, finally you use a small knife to make a lengthwise cut along the back to split the shrimp in half.
Tip: To allow the shrimp to absorb the spices evenly, lightly score the shrimp meat with a knife.
To eliminate the fishy smell from the shrimp, add 50ml of white wine to the shrimp, gently massage, then rinse a few times with clean water and let it drain.

Prepare other ingredients
You peel the ginger, wash it clean, then slice it thinly and pound it finely.
You chop the lemongrass.

Marinating shrimp
You sequentially add 4 tablespoons of fish sauce, 1/2 a crushed ginger root, 1/2 a teaspoon of chili powder, 100g of finely chopped lemongrass, 3 teaspoons of seasoning powder, 1 teaspoon of sugar, 1 teaspoon of garlic powder, and 1 teaspoon of turmeric powder into a bowl and mix the ingredients well.
Tip: If your family likes spicy food, you can add more chili powder!
Add the cleaned shrimp and use your hands to mix well so that the shrimp absorb the seasoning. Marinate for about 15 minutes.

Sun drying
Once the shrimp has absorbed the seasoning evenly, take the shrimp out to sun dry immediately!
Tip:
- The shrimp will taste better if you sun dry them for about 8 hours, so choose a sunny day to dry them!
- If there is no sun, you can put the shrimp in a sealed container and keep them in the refrigerator refrigerator, then take them out to dry the next day!
After sun drying for about 4 hours, the shrimp will be chewy and dry; you can use a pestle to flatten the shrimp so they don’t become hard and dry.
Continue to flip the shrimp and sun dry for another 4 hours to ensure they are completely dried.

Frying Dried Shrimp
After the shrimp has been sun-dried enough, you can store the shrimp in a box, and when you want to eat, just fry or stew it as you like.
Put 4 tablespoons of oil in the pan, heat it over medium heat, then add the dried shrimp to fry, about 2 minutes until the shrimp is golden brown on both sides!
