How to choose fresh chicken thigh meat
- You should buy from large supermarkets of brands that specialize in pre-processed chicken. You should choose chicken thighs that were produced on the same day.
- The meat inside looks still bright red, not undercooked, the skin still attached to the meat and no dark bruises appear. The meat is dry, does not leak water, and has no unpleasant or strange smell.
How to choose fresh lemongrass
- You should buy fresh lemongrass from the top to the whole body of the lemongrass plant. Fresh lemongrass usually has a light green color that gradually turns white towards the top, the layers of skin do not separate and show signs of wilting.
- You should choose fat, round lemongrass stalks that are whole instead of those that have had their skins removed.

How to prepare Lemongrass Fried Chicken

Prepare the ingredients
Wash the chicken thighs under running water, gently scrub with salt to remove all dirt on the skin and meat of the chicken thighs. Then, use a paper towel to dry the excess water.
Peel the outer layer of the lemongrass, cut off the dark green leaves at the top, keeping only the tender part of the stalk. Then wash it clean and slice it very thinly, then put it in a mortar and pound until the lemongrass is crushed.
Peel the ginger, wash it clean, and then grate it finely.
Peel the shallots, wash them clean, and then chop them finely.

Prepare the chicken marinade
Add to a bowl the ingredients including mashed lemongrass, grated ginger, 1 teaspoon of garlic powder, 1/2 teaspoon of pepper, 1/2 teaspoon of salt, 1 tablespoon of fish sauce, and 1 tablespoon of oyster sauce.
Then, use a spoon to mix the ingredients evenly together.

Marinate the chicken
Use a knife to score both sides of the chicken thighs and then place the chicken thighs in a bowl. Pour the marinade over the chicken thighs and use your hands to gently massage and mix so that the marinade soaks into the chicken.
Tip: Scoring both sides of the chicken thighs will help the marinade penetrate deeper into the meat!Cover the bowl with plastic wrap and let it sit in the refrigerator for about 8 hours or overnight.
One hour before frying, take the chicken thighs out of the refrigerator to let them warm up a bit.

Prepare dipping sauce
Prepare the dipping sauce with a recipe that includes 1 minced shallot, 1 teaspoon of sugar, 1 tablespoon of lemon juice, 1 tablespoon of roasted rice flour, 1 teaspoon of chili powder, and 2 tablespoons of fish sauce.
Use a spoon to mix well so that the ingredients blend together.

Mix the flour
Use your hands to toss and gently massage the marinated chicken thighs, then pour in 80g of cornstarch and mix well until the flour coats the chicken thighs completely.

Fried Chicken
Pour 300ml of cooking oil into the pan, heat the oil until it is very hot over high heat, then gradually add each chicken thigh to fry, at this point reduce the heat to low so that the chicken thighs do not burn.
Tip: Spread each chicken thigh evenly in the pan, avoid frying too many at once to ensure that the chicken is evenly crispy.

- Before frying the chicken, you need to take the marinated chicken out of the refrigerator for 1 hour to warm up, so when frying the chicken in oil, it will not splatter and the meat will not become dry.
